THINGS YOU’LL NEED:
1/2 to 1 cup chopped chilies Use Thai chilies, or your favorites - or use sambal oelek
1/2 cup water
1/2 cup rice vinegar
1/4 cup sugar use 2 tablespoons for less sweet - you can use up to 1 cup for sweeter chili sauce
1 tablespoon hot chili flakes use dried/crushed - bird's eye chilies, Thai chilies, japones, chile de arbol, or others - or use fresh minced
1 tablespoon fish sauce
1 tablespoon fresh minced garlic or more - 3-4 cloves
1 teaspoon fresh minced ginger
1 tablespoon cornstarch mixed with 2 tablespoons water to make a slurry - double this for thicker sweet chili sauce

Huh! That easy. I have some ghost peppers growing in the garden, I'd love to see what you do with them. We've eaten exactly 1 and let me tell it was pure fire, so some recipes spittle be nice. I do not waste food especially something i grow and harvest. Have a great week! Until next time.

Just made this - delicious!! I subbed honey for the sugar and it wasnt sweet enough so added a tbsp more sugar. I also added 2 red habs for fun 😄 Will definitely be making it again

Sup mike, it's sauce day lol. Made this with Thai chilies I had left, finished open jar Calabrian chilies, some hot red cherry peppers ect . It's already in fridge so taste again later, also did chimichurri, 3bean salad, and have extra marinade and beans to make tomorrow, don't want to bring all to cookout lol. Thanks for the help bro👊

Yum! You have the same pallet as myself. 61 yrs old and must have hot chili peppers, salsas, and sauses on almost everything I eat. It never bothers me and is addictive . Chili peppers are extremely healthy and produce the good chemicals in our brains for those good feelings. That is why chilies are addictive. Healthy in every way!

I’ll have to try this one since I grow Thai chilies every summer. We use them instead of cayenne for general seasoning.

Thanks! With enough vinegar/acidity, it should last a month or longer in a sealed container. You can add a touch more vinegar or citrus to help it keep.
Another excellent heat-worthy mix from the Mad Chili Pepper Madness Master himself. Well done, Michael. But I think you need a shave... 🤣🤣🤣 Unfortunately, Thai peppers of any kind are hard to come by where I live. And sandy-loam soil, combined with the extreme drought we are in, is not conducive for pepper growth. So, I use other chilis of near-equal Seville rating. Go with what ya got! B.T.W., have you tried Piloncillo instead of granulated sugar?

I am looking for a recipe for Chinese hot pepper chicken.
The local Chinese restaurant in my area closed, and is my favorite dish they made.
It is made from jalapeños, onions, and chicken.
Mot sure on the brown sauce used in it. Wok cooked till almost burned, it is heavenly. Sorely missing it. I just wondered if you have a recipe for it.

No, they are not exactly the same. But while they may not be interchangeable in all recipes, they can certainly complement various dishes in their own ways.

Yes, though it depends on the resource. Fresh pods are best. Dried mostly likely won't work. I would look for a good seed resource.

You didn't use the salt, right? Is it because the fish sauce salty, or you don't need it here at all?
Yes, fish sauce is pretty salty. You can add salt to taste if desired.
Very similar to the pepper relish recipe. Looks double, I'll use Datil. Cayenne, Cherry pepper and green bell pepper.

That's a long red cayenne type I grew this year.
How long does it last before it gets old?
It will last around a month in the fridge, but can be frozen for up to six!

I am diabetic, so sugar is not an option. Glycine is an amino acid that tastes as sweet as sugar and is a great substitute.
What is the ratio of Glycine to sugar as a substitute? Just curious. Thanks.
