  • The food industry would not exist without immigrant Back of House restaurant workers. From line cooks to dishwashers - they play a crucial role in any satisfying restaurant experience. However, even though they are considered essential, they are often excluded and ineligible to receive any government aid or support due to their citizenship status.
    In this episode of Hungry for More, we highlight the Los Angeles organization No Us Without You. Started by founders Damian Diaz and Othón Nolasco, their mission is to provide aid and food security to the undocumented workers fulfilling thankless roles in the hospitality community. We hear first hand from the back of house workers working to support their families, and restaurants like Casa Vega, cultivating a positive work environment for generations of their hard-working immigrant staff.

      It's not wild, it's a wakeup call. Grocery store workers struggle to afford their own groceries. Manufacturing workers struggle to make ends meet. Time to start thinking about and supporting all the people behind the scenes that keep things going.

    As kitchen manager of a local bar I love this, the pandemic made food service tough but we pulled through and seeing people giving back to those of us who give our all to others every night to make sure they eat well....truly inspiring thank yall from the other side of the country in NC

      also here in NC, and i moved here in the middle of the pandemic (worked at a seafood restaurant in florida before that, and our head chef was more verbally abusive than gordon ramsay).
      there’s so much satisfaction that comes from knowing that someone had a good meal, it’s a satisfaction that you’re familiar with, but anyone who hasn’t worked on the line and been 30+ tickets deep, they don’t know. the way that all of the food comes together, and especially if you get to see the customer’s face when they react to your food, the level of satisfaction we get from that is inexplicable

    I worked maintenance for Popeyes chicken for a bit. I still have pictures: they'd throw away AT LEAST forty pounds of food a day. Couple of trash bags half full of chicken, chicken tenders, shrimp. Boy and don't let them see you taking any of it ... FIRED!
    Seeing what these amazing people are doing to feed their workers' family's is beautiful. Straight up beautiful, man. Little Guys vs Corporations : Night / Day.

      in France we are getting laws against food wasting, they are trying to reduce wasting by 50% in a few years. Supermarket and restaurants have to donate their spare food to associations who collect and give it to people in needs instead of throwing it away. Hope they do it everywhere :)

      Food industry workers are all subsidized by food stamps. It forces the government to pay the wages restaurant’s know they can get away with skimping on. The owners seem to get a new car yearly though (paid for indirectly by food stamps!)…

    Super positive vibes here. Love what these guys are doing.
    I don't have a car, so it's not practical for me to try feeding the homeless in my city.
    But I have a bike and a backpack that will hold many brand new socks.
    One of the main things urban campers need is socks.
    Give 'em food and such, but for real give 'em socks, too!

    I've worked in a restaurant before and it's the hardest work I've ever done. Like physically and mentally. You have to feed your family and sometimes you have to lose some of your dignity. You shouldn't have to sacrifice your divinity to put food on the table.

    The fact that people don’t know how hard this job is(me being a back of house worker) is so sad and shows why chefs get no respect. It takes a special person to withstand those conditions and people think it’s such a low class job when i know most people can’t do what i do.

    I spent more than two decades in the restaurant biz; all of it in the state of Florida!! I have worked FOH, BOH, Mgmt. and corporate training roles throughout the years. Nobody works harder than the people behind the scenes!!! In So. Fla. these people are predominately immigrants, mostly Haitians!!

    This might be an unpopular opinion, but the best thing restaurants can do is pay their workers what they're worth. That means a base rate of $15/hr for the dishwashers, maybe $18-$20/hr in certain gentrified cities. If your business can't financially support that basic level of income for workers, you deserve to close.

    I worked at a restaurant where the owner would over work undocumented workers, under pay them and never pay them on time. It was upsetting... The alternative was to report the restaurant but then they be out of a job. I ended up quitting that job.

    Wait at 2:14 that guy says they get taxed on their paycheck but don't get benefits since they're undocumented. How do their employers withhold taxes for someone without a social security number?

      Those not eligible to receive SSN can apply for ITIN (Individual Taxpayer Identification Number). This lets them work above the table and file tax returns annually but doesn't make them eligible for Social Security or other benefits. It's still a really compelling avenue for undocumented workers, however, with many immigration attorneys recommending that non-residents apply as early as possible because documentation of having filed past taxes bolsters the case for being awarded a green card and eventually citizenship.

      @@ConnorDZG No, strictly speaking, but that's a great question. Technically, all having an ITIN tells employers or the IRS is that you don't have a Social Security Number. But it's not just undocumented workers who can't get SSN - the US government makes a distinguish between "resident" and "non-resident aliens," and resident aliens are among those who may be expected to document their work with an ITIN to record the number of days they're working on US soil.

      ITIN. They receive an "Individual Taxpayer Identification Number," from the IRS. Still not strictly legal but, don't let the scummy Marjorie Taylor Greens of the world fool you-- these people are doing everything in their power to become citizens. Including paying taxes.

    Hot take. I stopped going to restaurants because of the mix of underpaid workers and poor quality food. You can absolutely make better tasting cheaper food from a cardboard box fire than what you will get at 90% of these places. Just stop giving them your money the odds that its flash frozen or microwaved food is almost 100%

    Okay so.. you admit they are the backbone of an industry but glorify food drives rather than chastising and calling out individual restaurants that dont pay these people living wages?     As a LEGAL immigrant, I say, don’t take short cuts. Do the footwork to get your citizenship. And as someone who has worked in the service industry for 38 years in the back of the house. Learn English we shouldn’t have to speak Espanol for you. We don’t hire those people at my place of work. Thank God!!

    Yeah well back of house workers don’t have to deal with their mistakes, front of house does. Everything is the server’s fault.
