First time I saw someone fry a yellowtail without scorching it, lime or vinegar salt and black pepper is all the seasoning needed,throw some garlic or onion in the hot oil so the kitchen dont smell like fish
Gabrielle Eloise no need to marinate as I don’t find it makes much difference but it’s entirely up to you. Ensure there’s no moisture when frying as it will fall apart and stick to the pot :)
You remove the head and bailout the fish and split it down the back. First .Take a cup of flour and season with salt and pepper ,coat the fish with flour and place in hot fat .Fry 4 mins on each side until done .

Season fish well then dry with paper towel before frying. Wet fish will break apart when frying. Make sure oil is very hot too :)
