I was so happy to see this type of cornbread recipe. BECAUSE my Mom and Abuela (grandma) made these for us when we were kiddos. They called these “Gorditas” (chubby girls)! They sometimes they added jalapeño 🌶️ bits, bacon 🥓or dehydrated/dried shrimp 🦐! Yup shrimp!!
I make my cornmeal mixture , and I add it to my greens , after my greens are done , , let it cook on top of MY GREENS for about 30 minutes , yes it's good that way too . My aunt ,that lived in the COUNTRY COOKED THEM LIKE that ..😃 .

In my little island of Puerto Rico we called them sorullitos de maiz(cornmeal rolls/fritters) and they are made very similar. We stuff them with cheese and even meats. Delicious ❤

If you add too much water, don't start over! Just take a break and let the meal absorb the water. In fact, I never cook my hot water cornbread right after adding water. I always let it sit and soak in a bit before frying it.

The outside shell is firm enough to allow you to cut it like a bagel get two halves and spread that butter or honey butter on. KISS KISS muwah, thankyou! I have watched and commented on almost every HWC video trying to obtain the elusive secret to ingredient or method. Thanks to your instruction, IT CLICKED. I finally get it. It is method and that method results in a DOUGH. Not a blob of sand, but dough. Whatever do you mean DOUGH? It is only cornmeal. Well friends if you follow her slow to incorporate water technique (so you don't add too much) with patience you will achieve the dough consistency and success. I rarely lose my temper but too many HWC failures have ended up with me slamming utensils, pots and drawers, and left me crazy cranky. I always ALWAYS fail. I followed your method and had great success, first bite, time traveled to back to comfort. 🥰 Thank you.
