- As you can see we are still on the move at the time of this video, but we are getting closer by the day and believe it or not we still had to eat so we broke out the get out of the dog house guarantee...Steak And Shrimp. We have it on good authority that the Lemon Pepper Wing Dust is good on seafood so we gave it the old college try and I have to say it passed with flying colors. As any well-rounded diet requires we polished it off with a couple of KC strips all covered in two of our favorites, SPG and Cow Cover. It was a real good time! Check out the recipe below and make some yourself!
Ingredients:
3 - NY or KC Strips
1 - lb of raw shrimp
1 - Stick of Kerry Gold Garlic Herb Butter
Cow Cover Rub
SPG Rub
An appetite.
Recipe:
Step 1 - Light and preheat your smoker to 265
Step 2 - While you wait for your smoker to heat up season your steaks liberally with your seasoning of choice…
Step 3 - Roll smoke on the steaks until they reach 95 degrees F
Step 4 - Heat up your grill to searing temperature...and drive in the grill marks! (typically 90 seconds per side)
Step 5 - Let your steaks rest wrapped in foil, and while you wait cook your shrimp in a Kerry Gold Butter hot tub until they’re nice and pink!
Step 6 - Break out the fancy plates and dig in!

I have the same grill and I think its a poor design on how to light the charcoal. Some of paint is also coming off after six months.
So, for the steaks- Is this correct? After achieving 94 degrees indirect, switch to at 650 degrees searing 90 seconds total for rotating for marks and a flip? Is that correct? [23 sec then rotate, then 23seconds then flip, then 22.5 seconds then rotate, then 23 seconds then done?)
