6" gutters are much easier to hand clean... more room to get your hand in there for pulling out leave/debris out.
And minimum 3x4 downspouts with rectangular outlets (no round outlets)

Gutters will always be problematic as long as the use the antiquate method of crimp and screw. A sure-fire way to enhance blockages and backups.

If I go from a 5" gutter (4 downspout) to a 6" gutter, can I get away with only 2 downspouts as opposed to 4? TIA

It really depends on the slope and length of the run but generally yes
