    Malai Kofta
    Ingredients
    For the gravy base
    Oil - 1 tbsp
    Bay leaves - 2
    Green Cardamom - 3
    Cinnamon stick - 1 inch
    Black peppercorns - 4
    Onions (chopped) - 2 small
    Ginger - 1 inch
    Garlic cloves - 3-4 cloves
    Tomatoes (chopped) - 2 small
    Cashew nuts - 5-6
    Melon seeds - 1 tbsp
    Salt to taste
    Sugar - 1 tsp
    For the Kofta
    Paneer - 200 gms (grated)
    Potato - 1 small (boiled & grated)
    Cornflour - 1 tbsp
    Salt & pepper to taste
    Corn flour - 2 tbsp
    Oil - to deep fry
    For the final gravy
    Red chilli pd - 1 tsp
    Chaat Masala - 1/2 tsp
    Garam Masala - 1/2 tsp
    Kasoori Methi - 1/2 tsp
    Fresh cream for garnish
    Method
    -In a pan, add oil, followed by the whole spices & onions.
    -Once the onions turn translucent, add the ginger & garlic. And cook for a min.
    -Now add the tomatoes & season with salt, turmeric pd & red chilli pd.
    -Add hot water and cover & cook till the tomatoes become mushy.
    -Once the gravy cools down, blend it to a smooth paste & keep aside.
    -In a bowl add the paneer & mash it really well. (Make sure the par dry the paneer before use really well)
    Now add the potato and mix it thoroughly. Add the cornflour & mix again. Season with salt & pepper.
    -The mixture should come together like a dough.
    -Now shape them as desired (I made a cylindrical shape)
    -Coat it with cornflour on all sides. (It should be a thin layer)
    -Deep fry in medium hot oil till golden n crispy.
    -Now in a kadhai, add the gravy & cook till you get the desired consistency.
    -Here, at this stage, you can adjust the consistency of the gravy as desired.
    -In a serving bowl, place the vadas, top them up the prepared gravy.
    -Garnish with kasoori methi & fresh cream.-Serve hot with butter naan & lachha pyaaz.
