Hello Bruce, there's some disagreement over the exact temperatures, but usually raw honey shouldn't exceed 110-115 degrees. It's usually recommended that a steady temperature of 95-100 degrees (in a water bath or similar) will decrystallize most honey, but some nectar sources are more difficult.
