    Dal Makhani, an amazing dish from Punjabi cuisine is prepared with lentils and beans combined with fresh cream (malai), spiced and cooked to get a creamy texture that enhances the flavor of the dish

    ingredients
    250 grams Black grams
    60 grams butter
    1 tbsp coriander pdr
    1 cup cream
    1 tsp cumin
    1 tsp garam masala whole or pdr
    2 tbsp Ginger garlic paste
    50 grams Kidney beans
    1 tbsp oil
    10 grams Red chilli powder
    1 to taste Salt
    5 number tomatoes pureed
    1 piece turmeric optional
    Directions
    • Thoroughly wash black grams, bengal grams and kidney beans. Then soak it in water (2 glasses) for about few hours . and cook till dal is cooked to mashable consistency
    • 2heat oil in a heavy bottom pan.
    • add cumin ,garam masala(optional) ,you can skip garam masala and add little garam masala pdr at last .
    • Add ginger-garlic paste ,turmeric and add tomato puree and cook well for 10 min in medium flame covered
    • Add chilli powder, and salt. Cook until the mixture thickens into pulpy sauce (about 3 mins).
    • Then add cooked grams and kidney beans to the mixture. Heat for 4-5 minutes. You can add a little water if you find it too thick.
    • Add the remaining butter and cream and cook for 10 minutes.
    • Dal Makhani is ready to serve. you can increase the dal to tomato ratio if you want

    I made this reciepe at home by following the same procedure and I can say there is no other easy method than this to get quick and yummy daal makhani. Thanks Vah Chef, you're the best.

    We had great results with this dish following this video. No measurements or anything required - just eyeballed it all. My only variation was to use a 16oz can of diced tomatoes and a small tin of tomato paste. Taste and texture were perfect. I could have gone heavier on the chilli powder but very very rich and flavourful in any case. My only complaint was in using the whole garam masala of cardamom, clove, cinnamon and bay leaf. Easy, of course, to pick out the cinnamon sticks and bay leaves but a bit of a pain in the ass picking out the cloves and cardamom pods before serving. As well as the food, the chef seems like a very nice man!

      SixStringNationTV just put all the whole spices in a cloth and put a knot, it won't create any problem.

    One way to further add flavor is to cook the dal overnight in a slow cooker instead of soaking in water and using pressure cooker. Instead of water, I use chicken or vegetarian broth. Also I add salt, onion, garlic, couple of whole green jalpeno and ginger.

      While cooking it overnight on low flame doesn't the daal burns?

      stallio nope, you just need to put ample amount of water in the dal for slow cooking. 10 times atleast.

    I like how excited this guy is about Indian food. I like to watch some of his videos to see how someone cooks Indian food authentically. I try to adapt these recipes to make them a little lower in fat and easier for those not experienced in Indian food.

    I made this yesterday! without onions!. i decided to make it simpler - one pot recipe. i sauted the ginger garlic n then tomato, added spices and then the soaked dals. n pressure cooked for 30 mins on low heat. The whole house smelled like a restaurant! i added salt later. Guys, trust me.. u dont even need butter or cream.. the dal tasted so good! i put tons of ginger n garlic paste. in the end, added little butter for the kick n some whole fat goats milk!... thanx @vahchef ! your recipe is amazing!

    Beautiful recipe, every time I have used this recipe it turned out great. People worrying about butter and cream, can try adding full cream milk instead of cream and reduce the amount of butter. It will still taste good but of course the best taste is with butter & cream :)

    This is exactly what i was looking for.. though i have made this Dal buhkara before, but its been years.. This Dal needs to cook on low flame atleast for 3 hours.. then u will have worlds best Dal Buhkara..thank u chef.

    Its true that Bukhara daal is kept on overnight charcoal heat, even the charcoal used has specific measurements.. Its still the same..
    Well back again on this video, I have craving for your cooking style...
    Its really making others to cook great dishes and in a style of its own...
    I have wondered many sites/videos but I come here at the end and I find what my heart was looking for...

    I am a HUGEEE dal makhani fan! I never eat Indian food in a restaurant without this and I have eaten it at more than 600 restaurants (all over India) but have very rarely found the exact taste. But I made this and this was the PERFECT taste. Haven't ever eaten a better one! took me more than 3 hours to make this but it was all worth it! Thanks a lot VahChef!

    Thanks vah chef, all my guests went crazy & they were all punjabi guests & they said that it tasted just like hotel daal makhani.     There is no doubt that Vahchef is a professional chef - it certainly shows in his style of cooking and the manner that he teaches. I do cook, but there are certain dishes which I do not cook on regularly basis and have to jog my memory about the method and the maslas to put in the dish.. However, I shall inform you how the dal makhani turned out. Regards

    Love this recipe. I did make some changes, probably not to most peoples' liking, but it tastes good. 1. I use Toor Dal, because it cooks faster. 2. I use a whole can of coconut milk instead of cream. All other the same. Greetings from USA!

    I just prepared this dish exactly as specified EXCEPT i didn't pressure cook it, rather i soaked it overnight and then cooked it in a crock pot for about 8-9 hours. It turned out simply AMAZING! The only thing i would suggest is to go easy on the whole garam masala spices, as they can be overpowering if you cook them in a crock pot for a long time.

    Hi Veh Chef - i made the daal without kastori methi and it was really really tasty , I added double cream and butter, which was delicious- for some reason I was really reluctant in adding it to the daal. I wondered how does the taste change or enhance of daal with methi??

    A couple of thoughts here. You can cut down on the dairy and still have a delicious dish. I "only" use 1/2 stick butter. Also, I've found the best lentil for this dish to be toor dal. Finally, I put the whole spices in a metal container like is used for steeping tea so I don't have to fish them out afterwards.

    I totally agree with 24moskito! Even for us Indians, the accurate measurements in a recipe like this is crucial as I would like to exactly replicate 'the' Dal Bukhara - anything else would be great no doubt, but not that exact dal :)

    Wow. What a great recipe. I've been struggling to make decent Indian recipes for my Indian boyfriend for two years. Being Korean I'm not familiar with many of the spices or steps in Indian cooking.
    This dish came out amazing! My boyfriend even said it tasted better than the way his relatives make it
    I added coriander leaves at the end and only put 2\3 stick of butter and half cup of cream. Never the less came out so delicious.
