DAL MAKHANI
Prep time: 2 hours + overnight soaking
Cooking time: 3 hours
Region: Punjab
Course: Main
Serves: 3-4
Ingredients
200 gms soaked black lentil (sabut urad dal)
3 tbsp Garlic water
¼ cup butter
water as required
For tempering
½ cup ghee
1 tbsp ginger garlic paste
1 tsp degi red chilli powder
1 ½ cup tomato puree
¼ cup butter
Salt to taste
For 2nd tempering
2 tbsp ghee
1 tsp Kasuri methi
½ tsp degi red chilli powder
2 tbsp water
¼ cup butter
For garnish
2-3 butter cubes
½ tbsp fresh cream
Process:
● Wash and soak urad dal, overnight.
● In a heavy bottom pot add dal and garlic water and let it cook for at least for 1.5 hours on a
low flame.
● Once dal is cooked add butter into it.
For tempering
● Heat ghee in a pan, add ginger garlic paste, degi red chilli powder, fresh tomato puree. Sauté
till the tomato puree is well cooked.
● Add the tempering to cooked dal and mash it.
● Add butter and salt to it and cook until well combined.
For 2nd tempering
● Heat ghee in a pan, add kasuri methi, degi red chilli powder and water.
● Add the tempering to the dal, add butter and give it a boil.
● Serve hot in a serving bowl and garnish with cream and butter cubes and serve with hot roti
or jeera rice.

I must confess that I got it right only on the second try. The first time I just couldn't bring myself to add so much ghee and butter. Before I started watching RB's videos I used to make this much dal in 1Tbsp of ghee. Only after I made dal maharani and panchmenl dal ( both pretty awesome ) did I get get the courage to use the required amount of butter and ghee. And the results are outstanding. Thank you.

I always thought more the ingredients better the taste. But, this simple yet so defined recipe just makes me say cooking is an art that requires patience to achieve what your heart desires❤

This recipe is one of the most authentic and the best. In reality dal makhni doesn't have many ingredients but the focus is to get the entire cooking process right. Very well explained by RB.. Amazing
I love to keep listening to him, because I’m away from my home in foreign country and looking at his recipes and then cooking by myself and top of it while watching his content makes me feel like I’m home and the cherry on the cake is that food turns out really delicious ☺️

I'm 55 yrs. The beginning of the video made me nostalgic because my mom and dad had, in the '60s, opened a restaurant and it's name was "Moti Mahal", and today, my brother who is 52, coincidentally loves dal makhani. We both didn't know the history. Thanks a LOT for that bit🙏☺

Okay - tried three makhani recipes in parallel over this weekend - and without a doubt the one Chef Brar shared here was the best (one of the others used rajma and different spices, the second totally different set of spices again). The authentic - "uncontaminated" version here is so delicious - we cooked this for about 6hours and then tried it the next morning - incredible. Now we will practice lachha parathas to eat with :D
