    Great vid RY. You definitely reminded me that I really need to do the same to my gas grill and soon. I use my gas grill year round especially during the harsh winter months here. The only thing I do is cover the bottom catch pan with aluminum foil so that's the easy part to clean up. Those burner covers are heat/flame deflectors and mine are very close to being replaced due to rust and grease build up. You're correct that underlying grease can and will cause flare ups if not a blaze, lol. Thanks for sharing and cheers to you!

    Good info. I looked a litter closer at my gas grill this past weekend while doing a spatchcock chicken on my Weber. Holy crap was I surprised at the condition it is in.

    Something I learned a few years ago is that adding some extra "flavorizer bars" goes a long way to prevent grease fires. You basically want a maze of hot metal your fat has to go through so it's completely vaporized before it hits that catch pan. Works awesome.

      so you added more heat tents in there?? and it helped? I just cleaned mine, like 5-7 cooks... in fact I just heard him say 4-6 cooks.... maybe that was my problem

    In my catch tray where all the gunk falls. I put cat litter in there to absorb all the grease and gunk. Works great, easy to clean.

      I had a grill that I put a layer of sand in the catch tray. Of course, if you don't clean it once in a while you just end up with really flammable sand :) I learned that the hard way.

    I literally have the exact grill you do and find it to be one of the hardest grills to work. I own 7 different styles and shapes of them including various smokers and a bonafide pit too. I have learned that removing the flame protectors makes a huge difference. The grease can free fall toward the collection pan and not flare up immediately. The bottom tray gets way to hot because of its proximity of the left three burners .

    Keep in mind, baking soda is a life saver if it does become a fire... Even if you ruin the food at least you won't get a full-blown fire

    I had a gas grill once. One time I let it go too long getting it warmed up. The excess grease started heating up and the whole unit got hot enough to deform the plastic knobs. Not to where they were all wonky, just the hole where the metal burner adjustment pin went in to. I had to use pliers to turn the grill on from that day on. They're nice to have for certain types of cooking, but I prefer good old fashioned fire. From wood, not grease. Lol.

    learned my lesson the hard way... now I completely scrub down my grill with soap water every spring and re-season it. no more crazy yard fires! if not maintained my grill goes from minor flare up to full on bon fire real quick.

    I had fire coming out of everywhere fire could come out of. Mistakes were made. Steaks were lost. 😂🤦‍♂️

    To save time cleaning those catch pans, line them with foil, and change as needed. One of the biggest problems I’ve seen is that people do not know there’s two pans.

      All grills are different. My Weber is easy to clean. I had a CharBroil that was more difficult.

    Hey Ry,
    I was recently researching bbqs, and as a longtime propane grill user, I recently decided to switch to wood and charcoal grilling and smoking.
    Through all my research and budgeting, I went out and purchased the Oklahoma Joe’s highlander. In my search for how to season, mod and maintain my new toy, your videos keep popping up.
    So thanks for posting your videos and sharing your knowledge.
    If I could pick your brain for a second, I was wondering if you have ever considered using your offset smoker to build a fire and cook with direct heat in the main smoker chamber. Perhaps remove the baffles and build a longer charcoal basket to keep those coals well vented. I have seen one video on RUclips where someone setup direct grilling right inside with the firebox, but nothing about grilling in the main chamber.
    I spent 15 years as a cook/chef and I just want to get a feel for how versatile the offset can be. Maybe an idea for a future video?
    Anyways, I was never a fan of cleaning out my propane bbq, and this video is a reminder of why... I will be charcoal and wood burning for life now.

      Hey nater. I too have the OK Joe's offset Highland smoker and I haven't used the main smoking chamber for grilling, yet. However, there's a another YT'er called "Meathead" who did (sorry RY) and he has a "how-to" vid about just that. Check him out and sub. Cheers to you as well.

      Glad the videos are helpful! I do know people who use the cook chamber for direct grilling with charcoal, and it certainly is set up for that with the included charcoal grates for the bottom of the chamber. But I decided when I purchased it that it was only going to be used for indirect smoking. The idea of cleaning ash out of that big barrel, along with removing and replacing the baffle plates, is enough to give me nightmares :) I'm plenty happy charcoal grilling on my Weber or on my little fire pit. But the Highland is definitely set up for charcoal grilling if you decide to go that route.

      Cooking With Ry I always have a shop vac handy, which I figured would be useful for cleaning out ash in the main chamber, otherwise I guess the other option would be to scrape the ash to the firebox, then out of the firebox, I can see that becoming a chore.
      I also noticed that you didn’t bolt your baffle plates in place, do you find you still have enough heat distribution?
      Either way, I have a small 18” or so kettle that I will probably keep and use if I’m only cooking up a few burgers. Thanks for the insight and the reply, cheers!

    line the bottom with foil. After grilling let the fire up high. It'll burn everything to ash and make your cleanup a breeze.

    Had a few fires happen on me. Always keep some salt on hand to put it out in an emergency.

      Baking soda and a fire extinguisher are probably better. But salt is better than nothing.

    Something wrong with nexgrills. Every cook I get a grease fire. I clean it and it will go for a little longer than if I don’t but eventually a fire will happen. I form a layer of large foil on the bottom catch tray and open the bottom for the grease catch, makes it easier to clean

      Same with Char Broil. There is a hear shield I can't access that is accumulating grease. I think it is a HUGE part of the problem. I'm gonna get rid of it. Had a scary grease fire today.

      Was grilling some ribs today. Deep cleaned my grill the day before. Drip trays and all. Kept heat under 300. During the final minutes the whole grill caught on fire. A huge fire. Quickly turned off all the burners and disconnected the gas. Pulled off my ribs ass fast as I could but they were burnt to a crisp. Nothing survived. Not the first time it caught on fire. Almost every other time I start up my grill it finds away to catch on fire. Top open or close it doesn’t matter nexgrills seem like they like to catch on fire.

    Hey, what do you think about covering the bottom plate with aluminum foil so it makes it easier to replace every few cooks ? I can make holes on it to keep the same bottom shape. Also maybe wrapping on top of the burner covers.

      Don’t do it. Most grill instruction manuals will tell you that foil can stifle the ventilation in your grill.

      @@TheGodYouWishYouKnew I did it and it's working great, probably after my next grilling I will replace it because I see it has already lot of burned fat, that would be stuck down there if it wasn't for the foil. I make all the same gaps as the grill has on the bottom so the ventilation will be almost non affected probably. People are dumb usually and they need to put those advices to protect themselves from people that don't have any common sense when dealing with gas and fire.

      Yes the foil is fine I use it and replace it after every cook. Makes cleanup extremely easy.

    I use a plastic scraper for this type of cleaning, that metal one you have is doing some work on much more than just burnt carbon and fat.

      My issue with the plastic scrapers is that I'm often scraping when the grill is extremely hot, and I don't want to transfer any melted residue to the cooking surface.

    I totally burnt $30 worth of jalapeno poppers yesterday because the damn gas grill fire torched all my poppers. Lol like fifty-two or fifty-six poppers and I think five survived. Lololol

      If it's flaring up too much I remove the meat for a minute. It's also a good idea to start with the smallest amount of charcoal needed and not overload the grill with fuel.

    Get a Weber. You will instantly have fewer grease fires. I’ve had fires on cheap grills with no food on them!

      @@chipsammich2078 I found this while doing some research. It was the only thing on the subject I can find. I agree with it, since I know since I got a Weber, i have had no fires, even while doing the same things: “From a performance perspective what you get with a Weber that you don’t get from a cheap grill is “Control”. It is easy to control temperatures, it is easy to control flare ups. You literally spend less time “Fire Fighting” and more time enjoying the flames.”

      If I spend $700 on a grill it better cook and flip the burgers for me. More affordable to replace a $200 grill every few years

    Solution is pretty simple, but not attractive. Just clean all fat leftovers after every use. When done consequently after every use, it is pretty easy to do for example, just scraping off with a wooden spatula and discarding all fat from the collecting tray.
    Then put the heat to 100% on all burners and let it burn off everything from the flavor bars, grates etc

      No, not really of course. For a BIG flare up, NOT that I have EVER had one...turn off the burners and turn off the propane valve. If things really are HOT, maybe run hose water over the tank. Move the food off the grill or to the indirect heat side. Close the lid, or for a real barn burner, pop the CO2 extinguisher. Then later clean that grill to sparkling perfection. Finally, invite us all over for a big BBQ grilled meal; I'll bring the fresh Pacific Northwest salmon! Then we can compliment you on your wonderful clean grill.

      IF you have one hell of a major fire, juuust maybe, especially if full. Have a water hose ready to run onto the tank. NOT onto the grill, of course, just the tank.

      5-in-1 painter's tool. I use one too. It's stronger steel than a putty knife which also can be used.
