  • During our visit to Kolkata, we were graciously treated to a delightful home-cooked Bengali meal at Pritha's house, prepared by her mother, Sangeeta Ji. The lavish spread showcased an array of dishes, including rice, ghee, ucche bhaja, aalu bhaja, katla maach bhaja, topse fry, islish macher matha diye dal, laal shak, four kinds of fish curries, mutton kosha, basanti pulao, maacher tok, assorted Bengali sweets, papad, mishti doi and paan.
    In the traditional Bengali style of dining, each course unfolded with Sangeeta Ji's guidance. We commenced with the potato bitter gourd fry, a dish known for its ability to revive the palate from sickness-induced dullness. Following that was the flavorful red spinach, succeeded by the peanuts mixed aalu bhaja which was eaten with with ghee.
    The experience continued with the unique ilish fish head-based dal. Ilish, being a prized fish, often commands high prices, especially during off-seasons. However, Bengalis' love for ilish allows for the option of obtaining specific parts if the whole fish seems pricey.
    Despite Anubhav's inefficiency in eating fish effortlessly, the reassurance from Pritha and Sangeeta Ji made the bones look less daunting. The juicy and flavorful ilish fish head marked a positive step in overcoming this challenge. We then savored mildly spiced bhetki and cauliflower curry, alongside topse fry, moroula fry, and katla maach fry, each curry presenting its own distinct taste profile, ranging from light to rich.
    The culinary journey culminated in the beloved combination of basanti pulao and mutton kosha, where the former exuded aromas from the rice and spices and the latter offered a hearty and robust layer to the combo.
    For dessert, we relished mishti doi and assorted sweets, concluding with the refreshing touch of paan.
    Amidst this fish-centric gastronomic experience, what truly stood out was the genuine warmth and joy with which Pritha and her mother shared their cuisine. Their passion for food and eagerness to share their cultural heritage spoke volumes, making this meal a truly unforgettable experience.

      Thats because Bengalis keep their veg and nonveg separate in religious households. Back in the day, kitchen for veg and non-veg cooking used to be separate.

    I'm a Delhi-ite but I have lived in Kolkata for a couple of years and That's the beauty of Bengali food, very simple looking and modestly made but taste is Top Class unlike the north Indian food overdone with butter and cream in almost every thing, otherwise nothing like north Indian food.
    Bengali people put their heart and soul in their food and that reflects. And its economical too ! Unlike the north

      True, that's why I cannot eat outside food more than once or twice because of richness of ghee, butter, and masala. Same items we make in home with just ginger, garlic, and green chilli without ghee/butter and tastes awesome!!

      Economical? What are you saying? Bengali thali has both vegies and fish. Fish is more expensive than chicken. And many vegetables are so much expensive. Bengalis can't imagine only rice with dal or one sabzi.

      Not economical in that sense because fish etc is more expensive in Kolkata due to demand than say in Delhi. But Bengalis don't care about economics when it comes to food and education. They will have modest homes and furnitures, simple clothes even, but no compromise on food and education. A Bengali will compromise on food if the toss up is with paying school fees.

      @@newsjunkieish I don't know that in detail but yes I agree to that too. But mostly as I felt Kolkata is very economical compared to Delhi or Mumbai. When it comes to hardcore vegetarian stuff then haryana is the place to be

      @@nitinanizwal2282 Actually hardcore vegetarian stuff in Bengali cuisine too is extremely vast and finger-Licking good. I hope @DelhiFoodWalks does a detailed series on Bengal's vegetarian cooking.
      My own grandmother and grandaunts, were experts in these dishes. In fact my Mom would also cook many of these dishes my Dadi taught her. But now these dishes are fading out because people usually prefer fish and meat preparations. In fact, there are many fish preparations my Dad likes that I don't see being made any more.
      Some of these vegetarian dishes you will find in Oh! Calcutta restaurant. But these dishes are extremely time-consuming to prepare, and needs a lot of skill to make. Usually restaurants find it difficult to find such trained chefs. You can say it's almost gourmet cooking.
      Bengali widows have played a big role in developing the intricate vegetarian dishes. Many of them became widows as children and could not eat non-vegetarian food. So they developed some very tasty vegetarian dishes that they and the other widows in their households could enjoy. Traditionally, fish is always eaten with each meal. But the over-indulgence in meat is a recent phenomenon.

      @@tanya2378 That's an excuse ! More than half of the Gujjus live abroad but they carry their culture wherever they go. In my personal experience, Gujjus live in USA or UK, but still don't eat steak or burgers and they follow their cuisine such as thepla, khakra etc. But Bengalis who live outside of WB or abroad, try to forget their cuisine, culture as soon as possible. So obviously, you won't get Bengali food (WB) much outside. The example of Gujjus holds good for Tamil, Telugu people as well.

      One is for veg another for non veg..common thing in middle-class bengali family. Those who can't afford two fridge, they separate the rows within fridge for veg and nonveg items.

    Am also from Shantipur, the most educated part of Bengal. We migrated from Beghe in modern Bangladesh in 1819, so we are technically Ghotis.
    Ghoti food is highly sophisticated and marked by global influences from all over the world. Bangal food is earthy, rustic and equally tasty.
    I really like Anubhav's assured respect to every cuisine. Somehow Punjabis like the finesse and craft of Bengali cuisine, whereas Bengalis like the high quality and simplicity of Punjabi food.

    Just one addition : entire bengal (east, west) mostly has very fertile land with lush green surroundings, so people know vegetables and cookings that are unknown to the most. Bengali lunch has two or three non vegetarian dishes at most, but other items are vegetarians. This one with 10 non veg items is really special or exception

      We also do that Fish Head Fish Tail with Saag We also Do bharta Dish . Bharta is When you mix Fish with aloo and Roast it fire . Finally we have Sweet water Fish and sea Fish Both as Mouth changer

      There is a preparation called bharli vaangi ... or stuffed brinjal we in Konkan add dried small prawns called jawla or kardi to it ... and it is served with white rice roti...or bhaakri as we call it

    I’m from Bangladesh and my husband is Maharashtrian. He didn’t know there existed so many varieties of vegetables, specially the leafy ones until he met me. He never liked sea fish much. Being a ‘Bangali Jamai’ he is now a fan of freshwater fishes from Bengal. I was surprised to see Anubhavji pronouncing Bangla words exactly the way my husband pronounces ☺️☺️☺️

    My mother is Bangal and my dad is Ghoti. I enjoy each and every delicacy of both the Bengali community and my mom cooked food is the best. I have seen everywhere especially in West Bengal that Bengali especially Bangals love to cook variety of veg and non veg items. And the love for Sweet is unmatched.

    In our region , we have Mashed tok ( fish tok , sour chatny) . Instead of tamarind a regional fruit "Belumbu" only available in South East part of Bangladesh is used.
    Almost the same like Bangladeshi food. Our ones are spicy. Very nice one. Thank you for sharing.

    If you see the whole meal , we start with bitter then salty then hot n peppery then sour then sweet. So all kind of taste are synchronized perfectly. This is a perfect meal. And those authentic fish items are just so so fabulous.
