Rhubarb Buttermilk Cheesecake with Michael's Home Cooking

- This cheesecake is made with buttermilk for a great tang. Also a topping of rhubarb that has a little sugar to keep it tart. This is a restaurant quality dessert that I had to make after seeing it on television. I ended up making the topping sauce twice, to double the recipe. You could use strawberries instead or a mixture of strawberries and rhubarb or any fruit actually. I ended up NOT using the lemon because I forgot to use it in the sauce.
I baked this in a 9 inch springform pan.
Ingredients:
Crust:
2 cups of chocolate cookies (I used 7 ounces)
1/2 teaspoon kosher salt
6 to 8 tablespoons melted butter
Filling:
2 pounds philadelphia cream cheese
1 and 1/4 cups sugar
1/2 teaspoon kosher salt
2 teaspoons vanilla extract
3 eggs
1 cup buttermilk
Topping/Sauce:
1 cup chopped rhubarb (1/2 inch pieces)
1/3 cup sugar
1/2 cup water
1 Tablespoon cornstarch
1/2 lemon zest and juice
All your filling ingredients need to be at room temperature so that the mixture comes together smoothly.
I forgot all about the lemon, oops sorry. It turns out fine either way.
I baked this cheesecake at 325F for 75 minutes in a water bath of hot water.
Here is a secret... I used a tiny amount of red food coloring in the topping.

I think this cheesecake recipe with the rhubarb topping is absolutely a unique recipe. My mother used to make rhubarb pie when I was a kid. Can like the way it tasted. So after seeing you put together this buttermilk cheesecake with the rhubarb topping I was certainly impressed.

Ya I know it sounds crazy lol but we would see it growing all over Cheyenne and would snack on it along with crab apples from the trees at the museum lol. That was 40 yrs ago. Aha! I THOUGHT there was color in that topping! Woot, it looks so good and I'll try it for sure. For some reason Rhubarb is hard to find fresh here (not hipster enough?) but I'll bet frozen would work fine. Thanks for another terrific recipe.
***** HA! I know that you read the description box! It would have still been red, but not as much. I would certainly think Von's would have fresh rhubarb, maybe a nice Albertson's too. Of course you really can use strawberries. It is a spring item and I was surprised a bit that I found it.

When i was a kid, my grandma used to make rhubarb pie. i don't remember if i ever tasted it & if i did what it tasted like. i hope it was a good as your cheesecake looked :-)
