  • This repost corrected previous sound problems.
    It’s been over a year since I got this recipe from Jill Dalton, while she was being interviewed by Chef AJ. She sold me on it me when she described this as “the mother of gluten-free bread”. I agree!
    I am strictly gluten-free, as are the recipes that I share. I rarely eat bread because although I can find gluten-free bread it is rare to find a healthy version that is made with whole grains. Typically the ingredients are highly refined starches like tapioca starch, potato starch, corn starch, or rice starch.
    This dense whole grain bread is dairy, oil, and sugar free. It is satisfying, and a good source of protein, fiber, and nutrition. The best part is that it’s delicious! I keep it in the refrigerator, slice it and have a bit with a nut butter as a snack with tea in the later afternoon, or toast it for a crunchy bit of bread with soup, stew or a salad. In the video I spread a bit of mango chutney on it, one of my favorite savory/sweet spreads. The flavors and the texture are strong enough to handle that slightly sweet, tangy, and spicy condiment.

    Nan, just a little food processor tip: If you hold the S blade in from the bottom of the bowl with your finger, it will not fall out. Then, after you pour out most of the batter into your pan, you can put the dirty bowl with the S blade back onto the machine and pulse it for a few seconds and the centrifugal force will spin every bit of the batter off the S blade so it is clean! :)

    Absolutely delish. I have been wanting a hearty toastable bread to have with my soups or toasted with jam or as a tomato sandwich. This hits the spot. I made it in three tiny tins and they baked in 45 minutes. I also soaked the grains and water by microwaving for 2 minutes and soaking for one hour. I was ready to eat this as soon as possible. Having it now with my lentil soup.

    Thank you so much. Great infos and all good to understand for me. Just one question..the 240ml water are just for the mixing in the food processor? Means the water for soaking is extra right? Many greetings from Germany.

      Hello in Germany! Thank you for writing. Yes the water that goes into the processor is what is used to make the bread. The water that the buckwheat and quinoa was soaked in for four hours was then drained very well before they were added to the blender with the rest of the ingredients, which included the 240 mL of water.

    I'm clumsy at slicing bread - the slices turn out thick on on end and thin on the other. I like your bread knife - with it, all the slices can be even. Can you tell me where you got your bread knife?

      Hi O K! Please forgive my delay, I had to get back home to see if there was a name on the knife-there is not. It’s a serrated bread knife that I believe I got on Amazon. You’re right, it dictates the even thickness of slices. This one makes rather large slices, and some people would prefer thinner ones. So be aware of that when you’re looking to buy.

    Thanks for the recipe. Very tasty bread came out. Another one from the list of gluten-free breads I bake. Recommendation for storage: I slice the bread. Freeze it in the baking dish. Every morning I loosen a few slices, thaw them in the microwave, put them in the toaster, and spread basil pesto. Very tasty.

I am very much working on my own spiritual and emotional path, trying to better my communication and positivity for the world. I have been a vegetarian for 40 something years, I do eat eggs and sometimes cheese, and use milk as a medicine, and very much identify with plant based, ethically and compassionately love animals and don't want to harm them...Anyway, carry on and I will watch more of your delicious recipes.     I love your recipe but I would like to add psyllium powder like 1 teaspoon ? It’s ok?

      A teaspoon shouldn’t be a problem, but if you try to replace the husks with the powder, it will change the consistency of the bread. So go ahead and give it a try👏😊

      @@3662mick I understand your confusion. If you watch the interview of Jill Dalton and AJ as she demonstrates this bread, she actually addresses a viewers question and says “husks not powder unless you use half the volume of powder”. She showed the Now Brand container of psyllium husks during this demonstration. Thanks for your interest Mike

    Can someone explain this rinse soak stuff for quinoa, chia...I dump in a coffee grinder and use it like a flour regular baking?

      Hi, thank you for asking Quinoa has A protective coating called saponin. It is a gut irritant, and some Collett toxic- Interfering with The absorption of healthy the nutrients. Unless it is done for you, which would be noted on the bag, it needs to be rinsed well. Easy to do in a 1/2 bowl shaped wire strainer (often sold in sets of 3 sizes on Amazon). No need to rinse chia.

      @@NanSimonsen Thanks. - appreciate. I check and I read on my Costco Kirkland 'Organic Quinoa' -package " is pre-washed, there is no need to rinse". Also, I do a web search:why wash quinoa before cooking - and I find a variety of opinions.

    Enjoyed your video, but wanted to say the diefenbaukia plant behind you is highly poisonous. It drips droplets off leaf tips that can cause suffocation if consumed. Having in the kitchen is riskey. Just sayin ....carter.... Canada

      Hi Carter, thank you for your concern. The plant. The plant that I am standing near is actually a Peace Lily-Spathiphyllum wallisii. It’s a terrific oxygenator in the house. I know there are similarities when you can’t see it up close. So thank you again for the heads up.🌻🙂🌻
