Ingredients
For the salad
1 cup uncooked brown lentils (or 2 cups cooked)
200 g rice noodles
1/2 cucumber
2-3 carrots (medium-sized)
2 tomatoes
1 bunch of cilantro, or parsley
For the dressing
2 cloves of garlic
1 red chili (or more)
4 tbsp soy sauce
Juice of 1 lime
2 tbsp rice vinegar
½ tbsp coconut sugar (optional)
To garnish
½ cup salted & roasted peanuts
Instructions
Start by soaking the lentils for 4-6 hours. Rinse with fresh water, then boil for 20 to 25 minutes until ready. Rinse and set aside.
Grate the carrots and cucumber, dice the tomatoes. Mince the garlic and chili.
Prepare the dressing: Add the soy sauce, lime juice, sugar, rice vinegar, garlic, and chili to your final salad bowl, stir well.
Boil the rice noodles for 3-4 minutes, make sure to add around 1 tbsp of salt to the cooking water. Rinse and drain the water.
Add the vegetables, lentils, rice noodles, and cilantro to your bowl. Mix well.
Garnish with salted peanuts.
Enjoy.
