BAJRA ALMOND SOUP:
INGREDIENTS:
Pearl millet dalia (Bajara dalia) ½ cup
Vegetable stock or water 1 cup
Butter / olive oil 1 tbsp
Finely Chopped garlic 1 tsp (optional)
Finely chopped onion 1 tbsp (optional)
Chopped coriander stalks 1 tbsp
Finely chopped mixed vegetables 1½ cup (Broccoli, cauliflower / cabbage, carrot, capsicum, etc.)
Milk 1 cup
Almond paste 2 tbsp (Soak 7-8 almonds for half an hour and grind it into a fine paste)
Salt as per taste
Freshly crushed black pepper as per taste
INGREDIENTS (FOR GARNISHING):
Almond flakes
Chopped coriander leaves
METHOD:
1) Wash and drain the bajra dalia. Add vegetable stock or water to it and cook it in the cooker for up to 1 whistle on high flame, and then for 10 minutes on slow flame.
2) Heat the butter / olive oil, Add the chopped garlic, chopped onion and chopped coriander stalks. Sauté till they soften. Add the chopped vegetables and sauté again till they soften.
3) Add the cooked bajra dalia, milk, almond paste. Cook till soup boils. Add salt and pepper powder.
4) Serve it hot almond slices and coriander leaves. enjoy with crispy bajra crackers.
BAJRA CRACKERS
INGREDIENTS:
Pearl millet flour (Bajra flour) ½ cup
Wheat flour 2 tbsp
Chopped curry leaves 5-6
Green chili paste 1 tsp
Chopped coriander leaves 1 tbsp
Curd 1 tbsp
Ghee 1 tbsp
Asafoetida ¼ tsp
Sugar ½ tsp
Turmeric powder 1/8 tsp
Carom seeds (ajwain) ¼ tsp
Salt to taste
Cumin seeds powder ½ tsp
Red chilli powder ½ tsp
FOR THE TOPPING
Black Sesame seeds 1 tbsp
White sesame seeds 1 tbsp
METHOD:
1) Combine all the ingredients for bajra crackers. Bind it in to a soft dough using required quantity of lukewarm water. Knead the dough very well.
2) Take a parchment paper and grease and it with little ghee. Place the prepared dough on it and roll in to a thin rectangular shape roti. Sprinkle some roasted sesame seeds all over the roti. Roll it again so that sesame seeds will stick on it.
3) Cut triangle shaped crackers with a pizza cutter.
4) Bake them in preheated oven at 200 degrees centigrade temperature for about 20 minutes.
