Delicious Mini Ghevar 🍯 Recipe by Shobha Indani | Traditional Indian Dessert

    INGREDIENTS FOR THE GHEVAR BATTER:
    Clarified butter (Ghee) ¼ cup
    Refined flour (Maida) 1 cup
    Ice cubes 2-3
    INGREDIANTS FOR SUGAR SYRUP (CHASHNI):
    Sugar 2 cups
    Cardamom powder ½ tsp
    Saffron ½ tsp
    Yellow colour 2-3 drops
    Almond, pistachio flakes and dried rose petals for garnishing
    METHOD:
    1) Melt ghee. Pour it in a flat vessel. Beat it in one direction with ice cubes in hands. Mix it very well till the ghee turns thick and creamy. Now remove the ice cubes and keep aside.
    2) Add refined flour in it and mix gently till the mixture turns like bread crumbs.
    3) Shift this mixture in a mixer jar. Add 1 cup chilled water in it. Churn this mixture for 30-40 seconds only. (Do not over churn this mixture as doing so, ghee will separate from the batter) Add 1 more cup chilled water in it. Strain this mixture with a soup strainer.
    4) Pour this mixture in sauce bottle/ jalebi bottle with a nozzle. Keep this bottle in a bowl filled with chilled water to maintain the temperature of the batter.
    5) Heat ghee in a flat bottom pan. Keep a small sized ring mould in the center of the pan. Let ghee heat till it starts little smoking.
    6) Pour 1 tsp batter in the center of ring mould from around 7-8 inch height. Batter will spread in small particles. As these particles settle down add 1 more spoon of batter. This way Pour around 15-16 spoons of batter to prepare 1 inch thick ghewar. Pour some hot oil on the ghewar with a deep spoon. It will help to cook ghewar from the upper side. As the ghewar turns a little golden and crispy, carefully remove the mould. Now remove the ghewar from the ghee and put it on the net.
    7) To prepare the sugar syrup (chashni), combine sugar and 1 cup of water. Mix it well. Cook it, stirring continuously till it starts boiling. Add cardamom powder and saffron in it. Add lemon yellow colour.
    8) Soak the ghewar in sugar syrup. Remove from sugar syrup and place in a flat plate. Garnish with almond and pistachio slices and rose petals.
    To prepare rabdi ghevar pour thick rabri on the ghewar and garnish with almonds, pistachio flakes and dried rose petals. Serve chilled.
