I think you said that it is 74 cu in and it definitely doesn't want to start easy. You have me concerned for both of us since I also have a 74 cu in in the shop. I bought mine at an estate sale about 7 years ago, never heard it run, started working on it a few months ago. No hurry around here. 😎 The story on mine was the engine was doing 1/4 mile trips in a different frame while the rest of the bike sat in a shed for 25+ years. He rebuilt the engine and put it back in this frame before he passed. Mine is supposed to be my electric start old man (I am 75 now) bike for when I can't kick start my 88 cu in Panhead. I didn't know it was 74 cu in until I opened the engine and did some measurements a month ago. I will be watching your progress, hope you get it figured out! New sub.

You sure your ignition timing isn't too advanced?
S&S quit making stroker pistons for the 1000cc bikes, with their 3 3/16" bore, many years ago. If someone did indeed use the wrong pistons, you might find it difficult to source the right ones. I would find it surprising if someone did, since pretty much any "wrong" piston would have the wrist pin too low, putting the piston dome in contact with the cylinder head. My bet is that it does actually have the correct pistons, it just would not go together otherwise.
That said, to achieve 74 cubic inches, the stroke has been increased from 3 13/16" to 4 5/8", a pretty significant increase in stroke. These are notoriously hard to start when stroked to this degree. Watching you try, it doesn't appear any harder to kick than any other stroker I've played with over the years. There is a technique, maybe someone has posted a video that demonstrates how to do this. Brute force alone won't do it.
I've had the same 1976 XLCH since 1979. I ran it for a period with 4 5/8" wheels in it. I went back to stock stroke probably 20 years ago. The power was fun, but nothing else really was. Like starting it... That, and engine life is significantly reduced. Kind of a big job, but you appear capable. Stock stroke opens up all kinds of options for pistons, and it gets a lot easier to start. Important for this 63 year old motorcyclist with an aftermarket right hip.
How about a compression decompression button like they put on the yamaha? I don’t know if you can do it with harley

Spent the money on one and lasted one season....shreded the rod bearing!
With a stroker, it need to be ridden hard and not putting around town! It is not a ridable bike anymore!
Went back to stock, took out all the kickstart hardware and use a Tech Source Electric start.
Bike runs great and is now reliable!
