- A Cuban sandwich is a combination of roasted pork, ham, and cheese that originated among the Cuban workers in the cigar factories in Key West, Florida as early as 1831. I tried to keep the flavors authentic & cooked it up on the Lone Star Grillz lonestargrillz... offset vertical Smoker.

Marinade Recipe
2 cups bitter orange juice
1/4 cup chopped garlic
2 tablespoons cumin
2 tablespoons dried oregano
1 1/2 tablespoons ground black pepper
Mix well and pour over pork

Tens of thousands of Cuban, Spanish, and Italian workers moved to the area over following decades, jumpstarting the growth of Tampa from a village to a bustling city. The first recorded mentions of a distinct Cuban sandwich survive in descriptions of workers' cafés in Ybor City and nearby West Tampa from around 1900, leading other historians to theorize that the sandwich as now constituted first appeared there.[12][13][14][15][16] A travel article published by the Mason City Globe Gazette in 1934 said that Tampa's cooking was "much more distinctive than elsewhere in the state" and lists Cuban sandwiches (along with Cuban bread) among the city's "signature foods".[17] Researcher Andrew Huse states that "the old 'mixtos' coalesced into something more distinct - the Cuban sandwiches we know and love - an original Tampa creation."[4]"

I enjoyed this cook but I sure wish you'd bring back pouring the beer of the cook into a glass. I always enjoyed that part.

Go to Wright's. They've won best of the bay for Cubans quite a few times. Also, Big Ray's on Interbay has a bangin' Cuban.

If you can’t find bitter orange, you can also just use lemon or lime juice. Some people prefer using that instead of the bitter orange. Also, I know you said you got the bread from a Cuban restaurant, but that didn’t look like Cuban bread. The crust is too dark and Cuban bread also doesn’t have that score pattern on the top. Cuban bread is usually much lighter in color, and the loafs are usually bigger. Restaurants in Miami cut the loafs down to make the sandwiches. On average you can get about three sandwiches from a single loaf of bread. Supermarkets do sell smaller sandwich sized loafs, but restaurants don’t really use them.
Also, this sandwich has two different builds. If you live in the Miami area, the build is pork, ham, Swiss cheese, pickle and yellow mustard. If you live in the Tampa area, they also add salami to it. Some places also add mayo, but I think that’s sacrilegious.
If you replace the Cuban bread with an egg bread, you wind up with the Cuban sandwich’s cousin the medianoche or midnight sandwich. The sweeter bread gives it a completely different flavor profile. You should try it.
My only critique is the use of “authentic” in the title. The lack of Salami and calling that bread Cuban Bread cost you a few points, but other than this, great job. I will have to try your pork recipe for my next Cubano.
We Cubans marinate the pork for 2-3 days, in the refrigerator. Also, we bake the ham, and not use sliced ham, which is a bit too salty. It was invented from the Christmas dinner leftovers.
We are going to be making this tomorrow - so could you clarify for me the timing. I understand it goes in at 250 degrees for an hour to an hour and a half uncovered, but is it another three hours after you cover it or three hours total cook?? Definitely don't want to overcook. Thanks (PS: we have just under a 5# pork.)

Sorry but not an authentic Cuban Sandwich. That is not real baked Cuban Bread that you buy as a large roll and the pork is never pulled but sliced off a pork leg in thin slices. Take it from me a Cuban in Miami that has tasted real sandwiches and real Cuban Bread bought at Cuban bakeries.

For the Roast Pork
5 lb. pork shoulder roast
1 tsp salt
2 C of chicken broth
1 chopped onion
Crock pot on low for 8 hours
Grease slow cooker with oil
Save the juice to spoon over pork after cooked.
(Liquid adhesion)
2 tablespoons olive oil
2 tablespoons orange juice
1 tablespoon lime juice
(Rub)
1 tablespoon light brown sugar
2 teaspoons kosher salt
½ teaspoon freshly ground black pepper
½ teaspoon smoked paprika
½ teaspoon ground cumin
2 garlic cloves, smashed
For the Cuban Sandwich
4 (8-to-10-inch) Cuban sandwich loaves, halved lengthwise
1 stick unsalted butter, softened and divided
1 cup yellow mustard
1 pound sliced honey-glazed ham
4 large dill pickles, thinly sliced crosswise
Roast pork
8 ounces (16 each) Swiss cheese slices
Kosher salt, to taste
Golden Ratio BBQ Sauce
¾ cup yellow mustard
½ cup honey
¼ cup brown sugar
½ cup apple cider vinegar
2 tablespoons ketchup
2 teaspoons Worcestershire sauce
1 teaspoon garlic powder
½ teaspoon cayenne
½ teaspoon salt
Dash of hot sauce
Cuban Bread
Dough:
1 package active dry yeast
2 teaspoons white sugar
¾ cup warm water
3 tablespoons lard
2 teaspoons fine salt
3 cups all-purpose flour

We Cubans marinate the pork for 2 to 3 days in therefrigerator. We also use baked ham, not sliced ham, which is a bit too salty.

Hey man another absolutely fantastic video- thanks! Quick question- how did you cook the pork to fall-off-the-bone at 250F for only 3 hours? Was it because you braised and covered it? When I smoke butts on my shitty generic kettle I keep it at 250 but it takes like 7 hours, wrapped in foil for the last 2.

Where's the Genoa Salami? No one calls them "El Cubano." And they originated in my home town, Tampa, not Miami.
What makes Cubanos so amazing (besides how delicious they are) is their cultural heritage. Cubans in Miami had a pork sandwich, that much is true, but Miami was not culturally diverse enough for people to need to call them Cubanos because they were pretty much only eaten by Cubans. There weren't enough outsiders around eating them to need to identify them as the sandwich that Cubans eat.
Similarly, Italians don't call sandwiches with salami on them Italian subs. Other cultures identified them with Italians and started calling them that. And it makes sense when you consider that they originated in a very diverse NYC. There needed to be a way to concery that the sandwich had Italian meats on it.
The same thing happened when Cubans moved to Tampa to work in the booming cigar industry. In Tampa, they came in contact with the growing Italian population. Then Genoa salami was added, and people started calling them Cubanos since they were originally made by Cubans.

Looks like a good sandwich. Most of the shops here in Tampa use a combination of mustard and mayo. Also the bakeries that make Cuban bread use a knife cut on top of the loaf and insert a palmetto leaf before baking. It adds a slight touch of flavor to the crust and after baking they pull it out but occasionally a bit of the leaf stays in the bread.
