Hi I was looking at bierocks and was watching your video on it because I wanted to make them again but been many many years ago and you said Hutchinson KS and the first time I had them was at this little place that you could order but had to wait and pick up no space inside to sit was in Wichita KS close to down town but to long ago to remember street lol anyways thanks for the refresher on making them and I remember most of it but dough was what I was wanting to see about so thanks again

A) Was the loaf done baking? Internal temp should be around 200 degrees F if you have a thermometer. B) Did you let the loaf cool completely after baking? If you slice when it’s still hot/warm, it doesn’t set inside and can end up gummy. C) If not A or B, it’s possible the loaf was under-proofed (didn’t rise fully). Maybe your starter isn’t strong, or you didn’t give it enough rise time.
I am certain that's not true, but, that's your opinion and perogative to take it out early. The butter darkens like that and make it that perfect crisp as in France.
As I stated in the video, they are reading much darker on camera than they were in person. However, real croissants should be “bien joué” (well done). But the amazing thing about baking is you can make things how you like them! If you like a pale croissant, pull them out of the oven earlier.
