Butchers trick: Add ice chips to the grinder when grinding meat. It adds to the weight and creates a juicy burger. Guga, by using a whole steak and then adding the ice you are doing what supermarket butchers are already doing.
Ey Guga, something tells me the reason why it is juicier is because the ice is lowering the temp in the middle and keeping it from cooking at the rate it normally would. What would happen if you used chipped ice mixed into the patty before you throw it on the grill? That would definitely keep it from getting that hole in the middle and it might distribute the juices throughout the whole burger instead of just the middle. Thanks for making these great videos!!

I do that. I don't even make my own ground beef. I just buy lean Angus ground beef and mix it with diced raw bacon, 3:1 or 4:1 works great. Amazing burgers.

the wholesale suppliers in the Netherlands opened their doors for folks without a business since they normally supply high-end restaurants and other food dealers and those are closed now they need to sell their stuff to the likes of me! ha! and they have wagyu products, not at retail price but way cheaper I got to taste my first line of wagyu products I'm nearly broke but happy at my prime beef dealer I always passed it by eh, too dang expensive! but since I had a nice tax return at just the right moment I thought mé free money! Let's dig in! from wagyu ribeye to wagyu burgers but also deer and alpaca meat eh, just for fun I tasted a sample and it was AMAZING!! Christmas is going to be something else! this year! the fat, the juice ah! more, please! the creme de la creme find was a frozen bison ribeye no idea what it will taste like will I make it the stone age way? direct on the coals I know how to flint knap enough to make a knife flint chard so I can cut it authentically in the stone age way anyway I'm sure it will be great!
That's awesome. With the bison ribeye, since it's such a rare treat, I would say keep it as simple and sure as you can. Bison is leaner than corn-fed beef, but has a much meatier, gamey flavor. It's very similar to grass-fed beef. Sous vide then finish on a super-hot pan or grill and baste with butter is how I would do it. It would definitely make a cool caveman steak, but just be very careful not to overcook it if you do it that way because it quickly gets tough and dry once you pass medium-rare.
I’d say the reason it’s juicer is literally because you’re adding WATER TO THE BURGER 😂 also, guga cooked them to ‘medium’ but the ice would have slowed the cooking down, making the burgers closer to medium rare aka juicy boys 👏🏼
I haven't watched the other chef mentioned, but the times when I have seen people use ice cubes (this technique has been out for a while) when cooking burgers....they place the cube on top of the burger AFTER you make the first flip. Then the cube melts gradually while it is finishing cooking. Sorry. It makes no sense to me to push an ice cube into the meat when it is raw and then flip an almost fresh ice cube over the fire.
Makes sense to add the ice for cooking medium /med well. Since it's being cooked longer, more water will evaporate and make the burger dryer, so adding the ice cube probably keeps it from losing all of its juices since the ice will melt and add in some extra moisture to offset it? Just my own thoughts.
for me this was interesting not for flavour, or juiciness, but for form. When you form burgers you generally make the center thinner to compensate for when it shrinks up and curls so you maintain a nice flat burger. Very interesting!
You could try the same test with adding a tablespoon of cold water on each side, at about half the time it takes to cook on that side. It might have similar effects with the taste but still being fluffy. As for the reason why, I think it might prevent some of the juices from evaporating, by diluting them with water and having the water evaporate instead, or it might keep the juices from caramelizing, or both.
You should've just coated the ice cube's with the meat, otherwise you stick it in one side, have it not covered with anything, you flip the patty over and the cube just melts and spills into grill. The method lost almost all the potential.
I mean all it's really doing is just arresting the cooking process by shoving an ice cube in it as you cook it longer. You could get the same effect just by cooking it shorter then brushing the stock/liquid over the burger afterwards.
A very important note to make is that using shop bought pregrounded meat may not be safe to eat at medium done-ness. If you're clean enough to grind it yourself, then there's less chance of listeria poisoning.

You could try the same test with adding a tablespoon of cold water on each side, at about half the time it takes to cook on that side. It might have similar effects with the taste but still being fluffy. As for the reason why, I think it might prevent some of the juices from evaporating, by diluting them with water and having the water evaporate instead, or it might keep the juices from caramelizing, or both.

You should've just coated the ice cube's with the meat, otherwise you stick it in one side, have it not covered with anything, you flip the patty over and the cube just melts and spills into grill. The method lost almost all the potential.
I mean all it's really doing is just arresting the cooking process by shoving an ice cube in it as you cook it longer.
You could get the same effect just by cooking it shorter then brushing the stock/liquid over the burger afterwards.

A very important note to make is that using shop bought pregrounded meat may not be safe to eat at medium done-ness. If you're clean enough to grind it yourself, then there's less chance of listeria poisoning.
