- After so many requests to dry age steaks in nutella I had to do. I will never let you down and today this episode is 100% requested by you. Nothing like a good dry-aged steak with nutella. If you love nutella on bread or anything why not have it with steaks.... Here is what happened.

Dry-age in HONEY. Honey is hygroscopic and doesn’t spoil. It can be used as an antibiotic to treat injuries.
I would be interested but then honey doesn't have anything special other than its viscosity and sweetness, so it would be like dry aging in sweet and thick water
I suspect the tendency to discourage bacterial growth might hinder the aging process, or even lead to the growth of undesirable bacteria over the desirable stuff. Then again, could be the opposite. Would be an interesting--if pricey--experiment. (Especially if agar cultures are taken during/after to identify the bacteria types that develop!)

The reason it is super mouldy is because of the high sugar content of the Nutella . This gives a lot of food for the mould to feed on.

Here's my take. This steak got decomposed by mold, that's why it's so mushy. Maybe this is where the off-truffle taste came from, too?

@@TheFatcake1234 well... Aside from getting sick right away, mold toxins also act as carcinogens, which means that even if you take in little doses, those might elevate your odds of getting cancer. This is why you are encouraged to throw out moldy food😅

It sounds to me that that Mould got real deep and personal with that steak. What I think happened is that the nutella actually kept the moisture in instead of letting it out. and since the steak was never dried it never firmed up and allowed the micelium to penetrate all the way into the steak instead of staying in the surface like other dry aged meats and hams and started digesting it in its entirety, that's why it was so tender. What you described as trouffle-like flavor was the mould body itself. What I think saved the steak was that the mould quickly took over and produced penicilin, preventing other germs to rot it.

Nutella is mostly sugar... so when you coated the steak, any bit of bacteria and/or fungi had an all you can eat buffet right around it. When the Nutella dried out (which happens even faster in a refrigerator), it probably cracked and oxygen got in and they started feasting.

Only fungi because too much sugar doesn't allow bacteria to grow. We actually use sugar to protect things from bacteria

growing up in the early 90ies my family move to Belgium in Brussels for 6 months. Both my parents were students so money were tight. For some reason one of the cheepest things available in stores at that time was white bread and nutella. In my memory those times were golden. to my parnts they were hard times trying to make ends meet... Nutella has a special place in my heart because of that memory and the realizations about perspective of life it has since brought with it...

Bacteria likes sugar not mold. Mold is attracted to moisture it was probably not aged correctly.
@@xFirestormStudios As well as bacteria, fungi grow utilizing sugars as their carbon source, so yes, they do like sugars too.
Maybe follow the nutella recipe but instead of sugar, use hone or some other inverse sugar. Would that work?
@@xFirestormStudios i'm thinking the nutella formed a barrier that the moisture can't permeate. I mean Nutella can get really hard when cold. This resulted in a layer of moisture between the meat and the nutella where the meat juices collected and can't escape from. It was literally a recipe for disaster.

When dry aging in something as thick as Nutella, you have to have one side or at *least* one side uncovered so it doesn’t trap all the moisture within. You got the moisture trapped inside and it started moulding and rotting.

The meat was decomposing and the mold had started to break up the proteins. That made it more soft. But eating it is not good. One time wont kill you, but better dont duplicate that

Remember guys, fungus isn't just on the surface. The "roots" could reach the center of whatever organic thing they're growing on.
That's partially true. If its a rather hard solid food, like parmesan cheese, you can take out the mold and it will be safe for consumption.
But on meat? (wich is made of soft tissue)

Should definitely try with vegemite/marmite. It's a salty, umami, yeast extract spread we put on toast in NZ/AUS/UK.
Others may've already mentioned this, the mold is trust the fruiting body of the fungus, it means the fungus mycelium has already spread through most of the steak

If you said it tastes like it was dry aged for too long, then try 2 more. One for 12 days and the other for 24 days. I think the sugars molded and quickened the dry age process.

Yeah, I think the peanut butter one worked cause there's a decent amount of salt, but it looked like the nutella just formed a sweet moist seal around the meat and let it start moist rotting rather than dry aging, which obviously is not what you want.

I never saw anyone else in the comment section mention this possibility, and I've see cocoa butter crystallize on chocolate, myself.
So I wrote that possibility out there so people can consider that possibility and give me some input and feedback.
What if you try covering it with a paste made of cocoa powder? Like only cocoa powder with a little bit of water or oil to make it sticky, without any sugar

Wrong. The mold is already inside the steak. Just because you see nothing, doesn't mean it's not there. Why do you think he thought it tasted like truffle.
He cut off the bits of the mold that spread spores, the rest are tiny roots which grow inside the steak, could be harmful.
what do you do to your control steak in your fridge? do you just leave it uncovered or is it wrapped/coated?
I had some kaya(coconut jam)on toast before and I wasn’t aware there was mold because the kaya was green and the mold had to be green too. I was also on a rush so didn’t think too much about it. Went to class, and vomited. Not a nice experience

you know generally nutella was not a bad idea. in the french cuisine they often use cocoa to flavor their dishes. and the sweetness of course goes also well because more sweetness means more sugar and more caramelization when roasting it.
So i could imagine a beef with some kind of chocolate'ish sauce being a quite nice experiment, but dry aging... i don't know.

The pop thing usually contains in chocolate too sometimes. Specific name is sugar bloom where in chocolates definitely have sugar in them right? To make tho chocolate sweet. So when there is moist around the chocolate, the sugar from the chocolate will float on the surface and by the time where the chocolate is dried, u can see the bubbly thing just like in the video😁. So dont worry to eat them. Its not poisonous or something🤣.
