Dear Rick I have to ask you somewhere, and I know this is not the correct place. But which fish do you think is best, cold water, or warm water fish. Well we live I the cold water area. You are in England when home, and I'm in Copenhagen. You travel around, and I don't. So I don't know anything about these things.
Every type of water has nice and less nice species. There's also the difference between freshwater and marine fish. In the end I think it comes down to your own taste preference.
Cold salt water hands down
Im actually an expert at tartare sauce i dont uses homemade mayo as there is a problem that you might get it wrong with food poisoning. I dont think you need homemade mayo for this recipe
