    Our family lived in Nepal where we processed a water buffalo in a day- no fridge, so pressure canned everything- pressure canners were going for 24 hours on many kerosene burners. On a short mission trip I helped cut, wrap and freeze a pig. Life skills worth having, love seeing your kiddos involved in every task.

    Bless little Lillianna's heart - so sweet and polite about the onion. I was giggling all the way thru it. When she said that she really liked it, I was shocked. Then to hear Meg say that her expression was saying otherwise and then to see her politely spit it into her hand... so cute!!!
    You've got a beautiful family. Each and every one of you are a real blessing to not only one another, but to us. Thanks for sharing, Meg and Ben!!!

      Jan and Karin, yes that is little Buggy's "real" name, though I hope I have the spelling right. If you go to the video shortly after this one (may even be the next one) you'll see the vlog announcing baby has arrived. If you've not seen that one, you have got to check it out. It's special. The way Ben is holding baby in that video warms the heart.

    I just love you guys I'm 74 and you all give me something to look forward to love watching Meg cook she is so inspiring love watching yall butcher that pig we used to years ago but now all the kids have left the nest so we don't eat as much but I love watching youall doing that

      I kind of think of Ben and Meg as family because that's the kind of family I've always been around husband wife and kids and doing family things I'm not so much interested in the homestead aspect as much as I just love them being together as a family

    This was a Megs Day !!! I ❤ watching you in the kitchen.
    I want to tell you what an inspiration you have been to me. Like I’ve said before, I used to be just like you until a car accident ( not my fault) in April 2019. Had to be cut out of my Jeep, brain hemorrhage & amazingly no broken bones. I was doing ok then one year later I fell hard on our deck…. Knocked out, another concussion but no bleeding.
    Was left with really bad frontal lobe damage & lost the ability to do the many things I used to do. Comprehension of my skills was gone mostly.
    But I have been with you since Bakersfield & you have given me much encouragement over the years.😊. Because of you I tried for the first time making turkey 🦃 broth since the accident. It took me 3 days to get everything organized ROFL 🤣 BUT I DID IT🥰 they turned out beautifully & it’s mostly because of you. So, my precious young Lady, I thank you with all my 💜. I’m 74 & grateful for your soft gentle way of helping give me the courage to try again.
    I LOVE YOU MEG & your whole tribe. 👵🏻👩‍🌾❣️

    In New Zealand hams are very common Christmas meal as our Christmas is in summer hams make a light meal before swimming at the beach

    My first job was at Burger King and I had to cut 50 pounds of onions every day. I would weep each and every day. Either I am hungry, but the onion soup and cheesy bread looked good. May God continue blessing on your family.

    Put your onions in the freezer for 20 min before cutting. It WORKS, no more tears. I've done it for years!! Great foods Meg. I'm always hungry after watching you cook 🍳 && I'm up & Adam cooking 🍳 yeah. Pot pies today with a filo crust. Yum.

    I have pig fat and belly fat sitting in my freezer right now. I need to get it out, defrost it, and start the rendering and curing....but I don't have a kitchen at the moment. Moved my family to SC from SoCal in April. Been renovating our new digs....big dreams once I have a kitchen....and flooring....and bathrooms.... The rain has been nice. Looks like we have some heavy clouds out there right now. Maybe no outside work on Friday either. Peace and Love neighbors.

    Yes!! England represent!! The River Cottage Meat Book. The mighty Hugh Fernley-Whittingstall an English food hero, cook/chef, activist, cookery teacher, journalist, TV presenter and all-round decent chap. His Tv shows in the 90s on The BBC about his small holding in Dorset England were what go me interesting in growing my own food. You can find loads of them on RUclips.

    Freezer Organization Tip: I use plastic square dishpans and plastic milk crates in my freezer to organize. But I have huge chest freezers to accommodate.

    Lordy me, why hasn't Meg been offered a Home Cooking channel on TV! It's so therapeutic to watch that I zone out altogether. Here in Europe, we use veg stock for the French onion 🌰 😀 soup as per Elizabeth David. She doesn't need pix to sell her books. Have you ever tried Mulligatawny soup? It's like watered down curry but pleasurable in the extreme. Don't need anything else before or after.

    Meg/Ben...ya'll being from California...wonder if you heard of/remember a restaurant chain called Coco's ...remember they had a good French onion soup with a dark sweet bread, sliced thin...and some good Boston baked beans too. Loved their Reuben sandwiches too! They had a couple of restaurants in the Atlanta area at one time....later closed...and may be closed as a chain, out west, and known only to history now? Jack's request for that and his liver pate from earlier tell me that our taste buds are "in tune"...lol... Ya'll are great to share your experiences with us, particularly around the holidays. 👍👏👏👏Thank ya'll so much!

    OMG! French Onion soup is to die for. Top that with cheese bread. When's dinner??
    Its after noon here in Cali and I've not eaten yet. I think I'll make a Top Ramen. Good soup when you doctor it up.
    Meg, I've seen your pots and their, made with love, marks. I spent a good amount of time using a so called "power wash" to try and make them look new. Thank you for loving your pots. You've inspired me to not stress over my pots.

    Orig. from PNW of the US and over 30 years in N. Germany...we always do a type of baked ham for Christmas. We have to use what's called "Kasseler" with a honey-orange-mustard glaze I created, but my kids really love it.

    Ohhhh ham is the best for Christmas. Fully smoked, skin on, just barely trim it, bake it, then use a mustard pineapple glaze. Deeeeeeeelicious.

    Next time, brown your onions for French Onion Soup until they are dark brown, almost the colour of milk chocolate. It will give you a depth of flavour that is more in keeping with great French Onion Soup. And don't forget the addition of dijon mustard to cook into it just before adding stock. It will blow your mind, how good the soup actually is.

    A great way to keep meat submerged is to fill a snap lock bag with water then pop on top of your meat and the lid will keep it in place :) Edit to add - a pint jar would work too!

    I put on Jason's channel - he needs to talk to you about his Kune Kune and the problem he also has with breeding them - would you do a joint pig breeding with him - cross the Kune Kune with the American Guinea Hog - you supply a sow and he supplies a boar then your supply a AGH boar to go with his Kune Kune sow - I wanted to see both Kune Kune being breed this will tell whether either or both are sterile - this cross do make a great eating pig and with the Kune Kune being a grazer very much a homesteading cross that are small in size but great natures to have around - it might become a small side business for both homesteaders

    When Ben said Cracker pig I was racking my brain to remember where else I had heard the term. Finally remembered. The James Herriot books with Mrs. Pomphrey and Tricki-Woo who sometimes went Cracker Dog though usually he went Flop Bottom.

    Clinkers! That's a word straight out of my childhood when I watched in awe as my dad opened our monster furnace's door and shoveled coal in, using a large snow shovel. In between fill-ups, he sometimes stirred the fiery red "clinkers."

I’ve been getting more painting done, wish I could borrow your tall ladder! My little cabin is looking like a gingerbread house… super cute! Brown stain with dark green roof and medium green trim, and light green door and porch floor. I keep adding water to my paint to make it stretch lol. I also have a little light blue paint I’ll be using on the ceiling in true southern fashion 🤗 Thanks for another wonderful video yall!

    So if you ever need to speed up the brine process you can always inject it into the ham as well. Cuts your brine time in half and you won't notice a difference in the meat. I did it with ours back in the spring and it turned out great!

    Key is getting those onion dark brown with out burning them. Little sugar at the end and stir stir stir. One of my fav meals ever. Oh how I would have loved my little one loving soup so young. Soup is my fav meal anytime anywhere

    I know the rain keeps you inside, but I remember you living in California. I'm in Nor Cal but the whole state has been in a drought for years. I've been concerned about getting enough this winter to make it through next year. Thankfully we have 3-4 days of rain now, but not heavy enough to replenish. I don't like going out in it either, but I'm waiting for a gully washer! 🌧️

    Meg, wish I had an address to send you a pair of swimming goggles to use the next time you peel/slice a bunch of onions. Chelsea at the Little Mountain Ranch (YT channel) does that and it seems to work very well. Glad it was rainy so we could get another interesting day from The Hollar Homestead. Nice salt curing of the large leg for prosciutto Ben. Are you sure it'll be safe enough from critters if you hang it in the barn? Wow, you made more cinnamon rolls too.     My sister serves the French onion soup with french bread. She makes toasted roast beef sandwiches and spreads cream cheese on the bread. It tastes wonderful dipped in the soup!

    I love french onion soup so much!❤ The cheese bread on top makes it more delicious!! A Christmas ham that you raised and butchered yourself will be extra special! And it looked delicious when Meg pulled it out of the bag. It really does look like beef. Will you all be butchering Biscuit this winter? Bacon looks so good!🥓
