This looks pretty good! It's kind of different than how my Moroccan friends make it though. The staple tagine spices are always tumeric, saffron powder and ginger in addition to the paprika and cumin. I've always seen them heat EVOO, add the onions. minced garlic, meat, spices, salt and pepper and saute for about 10 min, then add the herbs, finely chopped up big tomato. After the stew gets thick then they add the eggs and at the end sprinkle a little fresh parsley and drizzle with olive oil.

I like your website and videos! The only thing I would say is that Kabab Maghdour needs good olive oil (generously since we have plenty of it in Morocco) and not only butter..Otherwise, all is good! Thanks for taking the time to make the videos!
I've a ceramic one from Lakeland, but I didn't realise one could brown / fry in them. They do talk about just how delicate they are, and how little heat one should use. I'll give it a go, though.
@tyler62126 im not even a vegetarian! i love lamb in fact. The reason i asked was because i was in morrocco recently an sampled this dish, it made me sick afterwards. Im sure Titli's version will taste much better but it kinda put me off mixing meat and eggs!

@MouadiniIE There were definelty no tomatoes in the Kebab Maghdour I had in Tangier. Maybe it's a regional variation?

So let me ask you this. A tajine does NOT have a hole in the top of the lid, right? I always see an indention there, and assumed they were holes,
