I mean, at the end of the day, many characters in smash bros get their size changed compared to their canon sizes because if they did have their canon sizes olimar would be pretty much as small as an eraser, and then pretty sure that Ridley (the pterodactyl-like antagonist from metroid) would have to be like 3 times it's smash size

As a short young adult (I'm 4'9") I love it when video game protagonists are short. My favorite is probably Link, despite me getting into the series late. Arthur is freakishly tall for a man of his time, but he is still noticeably shorter than Dutch, which is an interesting choice considering the type of characters they are.
I think apart of it is also collision. The smaller you make your character the smaller you can make the hit boxes and so it’s harder to be hit. Conversely, by making the enemies bigger they’re easier to hit
Funnily enough, short characters have a game design/mechanical purpose too. It's a trick that has been used since the NES era; making the player character shorter than the enemies makes it easier to see what the opponent is doing, making it easier to tell what is happening and react accordingly, as your character wouldn't be blocking parts of your screen. Look at how small Little Mac is compared to the other boxers in Punch Out, or how small player characters are in Souls games, even compared to basic fodder.
i think this is mostly a by-product of game design: 1) most (2D) games are sprite based so it makes sense for characters to fit on a grid 2) some games (like 2D Mario) have power-ups/in-game mechanics that change the players size 3) bigger enemies are easier to hit and feel more like obstacles rather than annoyances 4) they give more screen space

donkey kong and diddy kong are canonically not related. their relationship is a bit ambiguous but most things indicate they're just close friends who live with each other.
Short people have a lot to prove and it fits with video game characters cuz most of the time they're on a journey to prove something (this coming from a decently short person)

Well he's definitely still short, he's 30 pixels tall in the overworld which makes him barely taller than Frisk at 29, who is a literal child. Sans is absolutely towered over by almost every other major character in the game, his is own brother for example is 42 pixels tall, Undyne is 46, Asgore is about 60, and even Alphys of all people has a pixel on him.
there are literally no actual evidence that the hollow knight characters are small there are actually more evidence pointing to them being relatively human size but we can't know that being said the knight is still a short king in his universe.
Here's my freudian theory that i have absolutely nothing to back up: a lot of game devs were probably bullied for their interests when they were kids, and because of that they like writing stories where the "underdog" ends up persevering, it's a tiny bit of self-insert

Well there's some discussion to be had there. Many fans think vessels don't grow like normal species, but instead grow through immense combat training, as did the Hollow Knight.
