I just remember that recipe in which chef said that his mentor adviced him to peel off the outer flesh (skin ) from the regular peeling just to ensure that it does not create a disturbance in textures . Do you remember that ??

All Chettinad dishes will need dry roasted pepper seeds. It won't turn bitter. Only if added to a watery dish and made to boil for a long time would result in bitterness..
