    "It's like .. really good prison food." Lol! My step-mom (very good cook) tricked my sister and I into liking tongue when we were kids. We ate it, thinking it was just beef. She then asked if we liked it .. "Yes, super good!" .. then broke the news to us that it was tongue haha. Goes to show, if even a picky eater kid can like tongue .. we should all try new foods now and then because we might just like them. :)

    man, hit me right in the nostalgic feels. my mom used to make that beef tongue stew when i was a kid. it's best as a crockpot/slow-cooker dish as that allows the tongue to become that insanely tender. (maybe instapot for modern day recipe?) now, i'm going to have to bookmark that place to go when i go back.

    I'm glad you like our Thailand. I'm Thai and I like it too. But I don't know what England is like. I just know that in the feelings of many people sometimes want to go there. Snow is something that Thai people have never seen. That's why many Thai people want to see it. Thank you for liking our Thailand.🇹🇭

    Hi Gary, your ability to pronounce this word, งา (Sesame seeds) is spot on! Most non-native speakers have difficulty pronouncing it, especially Paddy Doyle. He pronounced it, "Na-Ga." Your next word to perfect it, is, ป (ปลา =fish, เปัด=duck, แปด = 8), etc. Ask any Thai person to show you how to sound this alphabet out, they will be more than happy to assist you. Watch how their lips press together as they sound it out. My advise is to sound it out this alphabet the same way the French pronounced the letter P in French. Once you have mastered these two most difficult alphabets for non-native speakers, the rest of Thai words will be a smooth sailing for you. I had the giggle when you said, " Prig pbon ( พริกบ่น ) , because it means complaining/mumbling chili, instead of ground dried roasted chili ( พริกป่น), see the difference? 😁.     Great content brother! Hope you don’t mind some explanation on the broths as you seem a little unfamiliar in the beginning:
    The shop asked you whether you wanted Nam Kon or Nam Sai. Kon means thick/dense/viscous while Sai means clear/transparent. Certain dish can come with Kon or Sai option, usually broth-based, such as Kuay Jup or Tom Yum. While Kuay Jup Nam Kon’s broth can be viscous (I.e. added flour to make the broth thick), usually the word Kon indicates a different style of preparation which makes the broth colored instead of clear. Kuay Jup Nam Kon uses chinese five spices, which makes the broth brown in color but also “thicker” in taste. Tom Yum Nam Kon can add ingredients such as chilli oil, prawn’s “fat” (actually the hepatopancreas), condensed milk or artificial creaming agent; which results in its bright red color / thicker broth due to chilli oil and fat content.

    Welcome to Thailand, hope you enjoy your trip. I recommend Isaan food. Play papaya salad, grilled chicken, larb, pickled fish. Very delicious.

    Yeah, this is the place I would like to visit and it will be nice to know the best food places are near. It would be nice if you can try different things for us besides these restaurants., they look super yummy. The noodles 🍜 look heavenly yummy and definitely must try , loving the sesame too.

    Beef tounge stew and "Mi krob" are my favourite dishes at Mit Go yuan, Tom yum koong nam sai also spot on. 😋

    I loved stewed beef tongue. There is a very good place for that called Agave Restaurant at rama 9 soi 7

    You nailed it in this episode. Both of these restaurant are institutional and both have Hainanese root!
    Hainanese noodles is straight forward. Mitr Ko-Yuan; however, is the example of a "Cook Shop" one of the dying breed of restaurant in Thailand. Hainanese have reputation of hardworking and willing to do "dirty work" including working with Western chef. After they saved enough, they used their knowledge to open their own restaurant. However, certain ingredients are out of reach so they have to adapt with local ingredient and their own knowledge about Chinese food..... hence the "Cook Shop" was born. Typical menu are salad, si-tek (steak), and si-tew (stew) with typical Hainanese fair throwing in.
    Obviously, now Western ingredient and restaurant are much more accessible..... hence the declining of the "Cook Shop" which perceived to be fake and inauthentic. I would argue that it's their own thing though. The history "Cook Shop" is so important to the ever changing landscape of contemporary Thai cuisine and the life of Sino-Thai community.

    Ko Yuan is the Chinese name of the owner of the restaurant. Mitr is the bali-sanskrit word means friends or friendship so when combined the two words are translated to Ko Yuan friendship. Some of Thai language is borrowed from Bali and Sanskrit.

    Chinese stew usually added Maggi, ketchup and maybe some Worcestershire sauce to the bone broth. Good with either bread or rice. Cheers.

    Excellent choices mate. I’m always in the hunt for good lamb/mutton soup and anything beef. Have you tried Wattana Panich in Ekkamai? Talk about an old traditional stewing pot of beef and stuff plus a great lamb soup too!

      @Coralie Clarke lamb is sheep meat. Mutton is goat meat. Both are different animals, but both are sold as lamb/ mutton. One is a wooly animal and the other is one with a goatee. Both hv similar meat

      I think the confusion, which I had also is that in the UK, mutton is sheep meat and in SE Asia it’s got meat. It’s hard to tell the difference once it’s stewed in my opinion

    Your video quality is good. Are you using Panasonic Lumix GH5? (now got GH6). Any video camera Gimbal stabilizer in use? Like for example Zhiyun. What software do you use for post processing the video? Thanks.

      Thanks mate. I’m using an Olympus em1 mark ii, no gimbal just in camera ibis. Shoot in flat then add a bit of contrast and saturation back in post using fcpx. I’m happy it looks like it’s shot on the gh6!

    Great stuff Gary, Bangkok old town is unreal. Have you ever been to the Pad Thai joint near Jai Fai, not Thipsamai (3 doors to the left from Thipsamai), with the lime green walls, and the awesome collection of old school vintage photos. That would be my favourite Pad Thai joint in BKK.

    i always go to those non touristic places because my wife is thai, and yes the food is much better, but also much more spicy, but i love it..and the prices are also much better.i also like to eat that crispy bacon.goat meat you don't see that so quickly in Thailand.the beef tongue also looks good to me.

    9:43 thought I was having a case of deja vu.
    I've tried beef tongue a few times in Mexican dishes. Always was tough and chewy which has kept me from eating it again. I'll need to give this place a chance.

      I can eat everything you've mentioned, but I will skip cow foot though. I tried the Mexican Manudo soup from the can once, it smelled so rank, as if they didn't clean the foot/feet thoroughly, you know, like they, put the whole barn yard as the seasoning. I'm sure it is for the acquired taste, but it is not for me.

    If you search for delicious isaan food in the old town, go to 'bunton restaurant'​ its opposite from the ministry of interior or just next door from nattaporn ice-cream. Trust me, or i will pay your money back :)

    you know that you are in a honest restaurant when the menu is in Thai,English and Chinese (or only in Thai) and not a different Thai menu and a seperate English menu. because then you are fucked most of the times

      @@theroamingcook I don’t really eat much beef or pork. I also prefer not to cook fish or chicken in my home. I hate the smell and start feeling guilty about eating animals 😷 I usually buy baked chicken from Gourmet Market and order grilled barramundi from Harvest restaurant on Soi 31. I’ll order a beef burger on special occasions 😇 I like crispy bacon with my pancakes or a BLT 😂 My fish spots at Chatuchak Market & Punnawithi are closed which breaks my heart 💔 It’s complicated 😎
