  • Methi Chicken or Murgh methi is a dish prepared with chicken combined with fresh methi (fenugreek) leaves. It is the distinct flavor of the fresh methi that gives a unique taste and enhances the flavor to the chicken.

    Ingredients
    1 1/2 lbs chicken thigh meat
    02 grm chilli pdr
    1 chopped coriander leaves
    1 coriander pdr
    1 cumin
    2 cup curd (yogurt)
    2 tsp 0 garam masala pdr
    2 tsp ginger garlic paste
    2 tbs 0 gr chilli
    2 bunch methi leaves(fresh)
    2 numbe r onion small
    3 number tomato
    Directions
    • heat oil in a pan add cumin ,onion and cook till golden brown
    • add turmeric , ginger garlic paste
    • add tomatoes ,chilli pdr,coriander pdr, and curd and cook covered till well cooked
    • add methi leaves ,chicken and cook till the sauce is thick
    • add coriander leaves and garam masala pdr and serve hot with rice or naan with cold curd as accompaniment

    I made this dish yesterday, and it turned out awesome!! you are a great chef! very trustful, because I have seen other shows and tried making dishes, it does NOT turn out the way they say,but your recipe turns out just the way you describe.     To me it looks like he makes these dishes for himself....Every video he just can't wait to eat....Usually you would see most of the chefs taste or not even that...but Sanjay fills the plate and I'm sure he if finishes it...I love watching him eat...He is such a food lover...

    may be , most of these indian vegetables are often supplied by chinese veggi suppliers, the other greens are called methi leaves (fresh fenugreek leaves)

    I believe we need to add dry fenugreek/ methi and cream at the end. Neverthless this recipe looks fantastic as well. Need to tey this version. Thanks Chef!!

    Hi,
    Like wearing is to other's liking, food is to one's own choice. Hence just the way I may not criticize others cooking to be absolutely bad, I too have the privilege of no one condemning my cooking. he he he ... But all this when cooking for self .
    I try to cook things at my home to keep my wife and my kids happy.
    Also let me mention here, you channel is in my favourite list. Which ever recipe i refer to from any site, i make sure i cross check it with your channel.
    Just a small general thought, when we mention some recipe with a flavour like here we are looking for methi as the base flavour, I feel we must honour the flavour to utmost. hence the cilantro flavour added in the end or even the other flavours of dhaniya powder in the beginning was uncalled for since they subdue the fenugreek flavour. and as i understand the fenugreek flavour too need to be in very less quantity so that the appetizing crave is maintained.
    And also one or two whole red chilly, tampered in the beginning goes pretty well with methi malai. But the sting of the chilly should not spoil taste, which is very important to be aware of.
    and yeah, malai means white gravy to my choice.

    @Chivalryaintdead as Sanjay siad.. you gen get many of Indian vegetables in Asian stores. Not particularly Chinese but south east asian stores. As veggies are seasonal, you may not find what you want at times. @vahchef thanks for making it simple Sanj.

    I made this the other day with frozen methi leaves, utterly amazing. My wife said it was the best curry she ever ate, period. And I have to agree, it was so damn good.

    Actually the methi portion is not enuff and visible at all... It should almost look like palak paneer kinda look and feel.. Can add more methi so that it looks more green and delicious... Tastes good too... :)

    You mentioned in the video that if you add chicken breast after addding tomato it will turn a bit rubbery and hence use chicken thighs. Can you please explain more. I use only chicken breast. What is the reason for it.

    Hi chef, thank you for another great recipe. Recently I bought a packet of dried Kasoori Methi. How and where can I use? Can I use with chicken and lamb curry along with other leaves such as mint and coriander instead of fresh casoori methi? What does casoori methi add to the curry?

      +Vasavi Yeleti I tried it few times. I liked the taste but my friends didn't. It comes out better if you follow this formula (this is my own, I may apply for patent - just joking )- Take 1 bunch of Mustard, half bunch Spinach, quarter X Methi and 1 bunch of Coriander. Pressure cook with only the water the greens have from the washing with little salt, garlic pods, ginger cubes and green chillis. Use a blender or hand blender to whip them a little. Saute brined boneless chicken with onion, tomato, mix this greens and simmer till done. finish with a pinch of garam masala. Happy cooking.

    What is the last powdery ingredient that he adds? It sounds like, "grama-salapoda." Towards the very end of the video he adds this and says, "last night I made the grama-salapoda yesterday and it adds nice flavor to this dish" but I am not sure that I have it right. Thanks.

      If you can't get fresh then dried leaves still make a good curry. Even with fresh leaves available i use half and half (fresh and dry).

    Where would I find those exotic types of grens you use? Such as the curry leaf from the other day, and this green, didn't catch the name. Would I need to find an Indian market or would they have this sort of thing at an asian supermarket?

      these are methi leaves ,known as fenugreek in English. u can find them in Indian grocery stores. u can also replace fenugreek with spinach , the dish still tastes good

    @ke6br Not if properly handled. Cooking in a scratched teflon pan can be carcinogenic. If you treat your nonstick cookware carefully and do not scratch, it's fine. Throw away if its scratched.

      +Aditya Tiwari He said don't use chicken breast for this, only thigh's. I suppose if you precook the breast it may turn out ok.

      +Aditya Tiwari Yes, you can precook it slightly just as you seal the juices with chicken korma. I've done this and it's great.
