You made some valuable points, mostly about time inefficiency. I run 2-4 man crews depending on the job and location. My people don't stand around waiting for the other to finish a job. There is no set job, each person does every job. The only down time is switching which equipment they're operating.

Kinda disagree on the standing around point, there’s always something to do, can carry two trimmers and third guy can trim too, two mowers so two can knock out the back while one starts on the front. But just a thought, barely started doing a two man crew with my buddy.
I think it could depend on route density as well, Jobs that used to take me 35 minutes to solo are only taking my 2 man crew 14-16 minutes on average now
Another con to the 2 man crew is when one of them calls in sick. Now I gotta go fill in! Haha. With a 3 man crew, if one of them calls in, the 2 guys can usually bang out a longer day and make it happen.

I think another plus for a 2-3 man team is safety. If a team member injures themselves the others can render first aid and call for help if required. This is especially important for larger, remote properties or residential homes where clients are out during the day.
I like 2 man crews too - one man crew gets burned out really quick in this Ga heat.
by the time a 1 man crew gets to wednesday/Thursday they start slipping. 2 man eases the burden on the guys and they can work longer- so then it come about density and putting crew in best scenery to win.
I think two man crews are most efficient. Less time!
You bill the customer for the second man and that's why you keep your route tight. 2 man crew works the best on a tight route density. You wear out out your 1 man, you will keep your 2 man crew longer than your one man.
