Kentucky Hot Brown - A historical, original recipe from The Brown Hotel with worldwide appeal!

- Kentucky Hot Brown (Makes Two Hot Browns)
4 Tablespoons Whole Butter
4 Tablespoons All-Purpose Flour
1 cup heavy cream
1 cup whole milk
1/2 cup Pecorino Romano Cheese + some to garnish
pinch of ground nutmeg
pinch of salt and pepper
10-14 ounces sliced turkey breast
4 slices Texas Toast (crust trimmed)
4 slices bacon
1 tomatoes, quartered
Paprika
Parsley
Melt butter and slowly whisk in the flour until combined to form a thick paste (roux).  Continue to cook the roux for two minutes over medium-low heat, stirring frequently. Gradually whisk heavy cream and whole milk into the roux and cook over medium heat until the cream begins to simmer and thicken. This takes about 2 to 3 minutes. Remove the sauce from the heat and whisk the Pecorino Romano cheese until the Mornay sauce is smooth. Add the nutmeg, salt and pepper.
For each hot brown, you will use two slices of toast, with the crusts cut off, in an oven safe dish. Cut one piece of toast in half corner to corner to make two triangles. Put the other slice that is still square shaped in the bottom of the dish and cover with 4 to 7 ounces of the turkey. Place a tomato wedge on opposite sides of the toast with the turkey. Put the two toast points alongside the base of the turkey and toast. Pour one half of the Mornay sauce over the dish. Sprinkle with some additional Pecorino Romano cheese. Place the dish under a broiler until the cheese begins to brown and bubble. Remove from the broiler. Cross two pieces of bacon on top. Sprinkle with paprika and parsley. Serve immediately.

I worked at the Brown Hotel for a long time as the front desk manager. Everyone there had to know how to make a Hot Brown and all of the ingredients that went into it. You did a really good job, I think I’ll make some this weekend! I love the sandwich, but we also made hot brown pasta and hot brown pizza for banquet appetizers. Pizza was my fav!

@@comesitatmytable9044 I managed the front and helped manage banquets, but I believe the pasta was cooked rotini, cubed/ shredded turkey, bacon crumbles, mixed with the mornay and freshly diced tomatoes stirred through. Top that with mozzarella and let it brown under the broiler. The pizza was reminiscent of a white pizza. Crust of your choice, the mornay in place of the tomato sauce topped with shredded/ diced turkey, bacon crumbles, and diced fresh tomatoes. You then top that with mozzarella and bake. If I don't have a turkey cooked I ask the deli to slice me off a chunk of deli meat and then I cube it! Also for the pizza, make the sauce ahead and let it cool to room temp or use it out of the fridge cold. Hot sauce on a cool crust doesn't work so well. Top both with extra Pecorino Romano! Love you guys!
I always order Kentucky Hot Brown when I see it on the menu. Being from Southern Indiana I have some favorite places for you to try. Bell House in Shelbyville, KY, Noosh Nosh and Cafe LouLou in Louisville.
Those are some great favorites but I've not heard of the Noosh Nosh in Louisville so I need to look that one up!
I have always wanted one of these sandwiches ever since I heard of it. Now I know exactly how to make 😁It's late at night at the end of a hard day. I had to leave my sweet husband at the hospital earlier tonight. I was trying to relax and be comforted. This video did it for me. Thanks a bunch. Oh and I'm bringing my sweetheart home tomorrow. I had some cousins come up from California and they wanted to see our downtown so we went downtown. They wanted to try a traditional Kentucky hot brown so we went to the Brown hotel and ordered hot browns. That was the best hot brown I have ever had. They loved it too.
The Brown Hotel is known for this dish. They are the experts on this.

I had the divine pleasure of having a Hot Brown at Churchill Downs. Truly the most spectacular sandwich of my lifetime. I still remember the flavors today. Love Louisville, KY & Churchill Downs and the Brown Hotel has some of THE most beautiful furniture throughout its doors, than I've ever seen!
I have to make a Hot Brown soon. I absolutely love bread and gravy! As a kid I ate it as often as we had gravy...steak gravy, sausage gravy, chicken gravy (the BEST). Putting the cheese in it HAS to be even better!!! And the turkey and bacon will just add even more flavor! ❤❤❤

My mother made this for us one time when we were teenagers. I don’t know where she got the recipe from. Probably a magazine or a cookbook. I still make it to this day. It is one of my absolute favorites!!! ❤

At our local racetrack this year, Saratoga Thoroughbred Racetrack, we are hosting the third leg of the Triple Crown, which is usually held at the Belmont Racetrack in NY. However, Belmont is being renovated, so this year it will be held in Saratoga! A lot of people are thrilled about it, except maybe some residents of Saratoga.
I lived in Saratoga Springs years ago. I loved it there. I'm sure a lot has changed since the 80's though. It was quiet in the winter but come spring, it was busy with the track open. I can only imagine what it's going to be like during the final leg of the derby.
Whats crazy to me is, here in Kansas a hot brown is a buger patty, fries, roast brown gravy over the top, on toasted bread. Nothing like this recipe i hadno idea this was a "true" was the real Hot Brown.

Being a a West Coast gal I have never heard of Kentucky Hot Brown. However, I worked in a small restaurant while living in Idaho; the owner was from the south and came up with a sandwich that was grilled ham contained all those ingredients, minus the morney sauce…probably a off shoot of a “Hot Brown”. I will have o try this, looks delicious.

There are so many versions of this tasty sandwich, my aunt Hazel from Richmond, Kentucky made hers with a slice of ham and turkey and topped with a slice of tomato and bacon. Her was like a club sandwich covered in a tasty cheese sauce.
There are a lot of variety's out there for this. We believe this is the traditional version, but we are all about pleasing your personal taste buds,

I was traveling through SW Virginia a long time ago and stopped at this little back woods diner. I saw hot brown on the menu so I ordered it. It came out with bread, turkey on top and brown gravy. I joked and said this is just an open face turkey sandwich and the waitress said, no its hot and the gravy is brown. I just shut my mouth and ate it lol.

I just love when you take a bite of something, Tom. You crack me up everything you make when I see you take a bite of it. I wanna go right out in the kitchen and make it. I really don’t think I would care for that though the tomatoes being heated and dry toast on the side, just wouldn’t appeal to me.

Back in the mid to late 70’s (BC, before children) I had my first Kentucky Hot Brown sandwich. This Kentucky Hot Brown sandwich was served at The Red Geranium in New Harmony, Indiana. Since then I’ve had many KHB sandwiches but you always remember that ‘first’ time you tried something new to eat! You should ask subscribers when was the last time you tried something for the first time? Their answers of course would have to be something that you’ve never before eaten. As always, enjoyed the video.

This was delightful! I’ve actually had the hot brown at the Dwarf House in Atlanta (Chick Fil A) so they used their chicken instead of turkey. Still delicious! Can’t wait to try it this way!
