I've just dehydrated a mixture of chillies then ground them up to use as a spice. My son made a hot sauce using my chillies too. First year I've grown any & I'm definitely doing some next year 😊
@@Allotment-of-the-Dead Nor are paprikas 🤣 I'll give this ago next year. Tried it some time back but the fermenation went sour - might have used the wrong weight of salt.
@@Allotment-of-the-Dead Noted. It was some years ago now and I'm sure the advice I followed then was to use a certain weight of salt depending on the weight of the ingredients LOL (not all advice on YT is gospel as we know!_
@DigwellGreenfingers if it's a mash just add 3% of the weight in salt, mix it up. If it's whole chillies, 3% brine solution is great. Need to use rock salt or kosher salt so mo impurities that could affect the lactobacillus.
Oh i can't wait til next year now so i can make some sauces 👏. Can't do anything to hot though 😂
@debz_vegplot Sauces are really simple, just make sure pH is less than 4.6 and it smells good.
