    Iraqi food is very famous for the stews that are made of different vegetables. They are very healthy and delicious stews. We have most of the vegetables are made into stews. Okra stew is mine and my family favorite. Most of the stews are served with white rice or rice with vermicelli along with fresh herbs and vegetables pickles.
    Note : The amount of the liquid added is up to you. Some people like it less soupy but me and my family we like more liquid in our stews:)
    ملاحظة: كمية السائل المضافة متروك لك. بعض الناس يحبون المرقة الكثيفة بقليل من المرقة لكن أنا وعائلتي نحب الكثير من المرقة :)
    Ingredients:-
    2 lb. fresh okra or one frozen bag (16 oz. )
    3-6 garlic cloves chopped into small slices (length wise)
    1 can (6 oz.) of tomato paste
    Salt and hot red pepper to taste
    1 medium fresh tomato chopped very small
    1 whole green hot pepper
    1/4 tsp citric acid (lemon dozi) or ½ lemon juice.
    Boiling water
    Stew beef meat with bone preferably about 1.5 to 2 lb.
    Cooking oil about 4 Tbsp.

    How to cook okra stew Steps :-
    -Clean the fresh okra by cutting the top part. Put it in a colander and sprinkle salt on top. Leave it for about 5 minutes. This way you the okra will not be slimy as much. Then wash it under cold tap water then keep it aside in the colander. If you are using the frozen one , you can use directly. • Iraqi Okra (Frozen) an...
    -Heat some oil (2-4 Tbsp) in a medium pot then add garlic and cook for a few minutes.
    -Add cooked meat and mix well.
    -Add okra and cook for a few minutes.
    Add boiling water and fresh tomato and meat broth up to the 1/2 to 3/4 way of your pot high. Depend on how much liquid you want.
    Bring the stew to the boiling stage then tomato paste and hot pepper and mix well then red pepper, citric acid and salt to taste.
    Lower the heat to medium-low and Cook till the okra gets tender and the stew gets a little thick for about 30-40 minutes.
    -Turn the heat off and let the stew rest for a half hour or so. The flavor gets more richer and thicker.
    -Serve with white rice, fresh herbs and vegetables pickles
