- Happy new year and welcome to the first video of 2023. Today I'm fishing with my buddy Adam from @MovinWeightFishing and captain Chief. We fished on a Commercial fishing vessel, with two goals in mind. The first being early morning topwater tuna and then we transitioned into deep dropping for golden tilefish. I dropped some giant 2lb jigs in 800f water of as well! I show you how to clean and cook a golden tile fish as well and finish with a delicious steamed golden tilefish recipe.

Noticed you often use sesame oil for high heat cooking in your wok but I'd recommend trying it as a finishing oil towards the end of your cooking. It can also be used in marinades for Meats in korean dishes.
I'd also recommend exploring your sesame oil options I think you'll notice the difference in flavor with a good quality sesame oil.
Since you like asian recipes I'd also recommend experimenting with other braised fish dishes and or soups/stews I've seen you make thai(?) Style soup using coconut milk but there's a lot of different soup recipes in Asian cuisine and many of them use a lot of herbs and aromatics

I love all your videos! and the freshly cooked fish, not only delicious but the health benefits of it all.
As a Cantonese person, the way you steam the fish impressed me considered how many ppl gets it wrong. Some small suggestion: it's actually recommended to just use a small ceramic or metal plate/bowl inside of the steamer (that's the way we usually does it). and please prop the basket up with something like a chopstick, it will prevent the basket from falling apart in boiling water in the long run :)
I love this recipe and going to try it out myself.
Not with Golden Tilefish because we don't have that here (Netherlands) but I'll find some other white flaky fish to use.
Looks absolutely delicious and light.
I love that recipe! I cook a lot of west coast rockfish that way. Next time maybe try keeping the skin on the filets, fish keep a delicious layer of fat below the skin. Just use rock salt to get the slim off. Whole steamed fish is a very traditional Chinese New Year food as well. Awesome video Vic!

Happy New Year! Good job on the steam fish. Can't believe you never tried it before. Staple Chinese style for snappers, whole. The peanut oil at the end makes the skin crispy, and releases the cilantro, etal. aromatics. Tight lines.

When I used to fish in the ocean off Southern CA, I never used gear lighter then 30 pound test, and a much heavier rod. A lot of times I used my Penn 309 on a downrigger rod. Worked great, never broke a rod.
In hawaii we steam fish with various ingredients, and tend to wrap not just fish but other meats in taro leaves, banana leaves, etc.
You could use spinach and taro leaves, wrap it and eat it like that after steaming with your seasonings as well
I like the way you appreciate the catch like the colors and everything I'd love to fish salt again fished it once when I was about 30 had a awesome surf fishing trip love to go out on a boat and fish that's a dream day in my books !!!
Great video and Happy New Year, Victor! If you want the fish to taste more like the steamed fish at traditional Chinese restaurants, try using a soy sauce specific for steaming fish. If you're trying to preserve the taste of the tilefish, then using regular soy sauce is fine. Also, you might want to use less Sesame oil and mix it with Canola or Vegetable oil (1:3 ratio) when you sear the fish, because the Sesame oil has a pretty strong flavor, and it can drown out the taste of everything else. BTW: I'm not a cilantro fan, so I usually leave it out! LOL 😁

Great recipe, could get the liquids after cooking the fish , put in in a sauce pan, drop minced garlic and ginger, a Lil bit dark soy sauce, rice vinegar and corn startch mixed with a little water. To make a thicker sauce to drop on top at the end .

I've wondered why none of the youtubers steamed fish! It's great! Your recipe looks good but I was wondering about using that much sesame oil at the end. It's fairly strong. I use a little sesame oil for seasoning and then heat and pour regular cooking oil over it to finish. The cauliflower rice is a good idea too! I totally enjoy your channel!
I too was worried about the amount of sesame oil. It is incredibly overpowering and can ruin a dish quick. Go sparingly on the sesame, otherwise, a beautiful dish!!!!!

That locks very delicate fish but that is somthing els than baking your fish are fread fish.

As for cooking, you should try out fishing freshwater bass, get a bunch like 500 grammers. Clean it out, cut off the head, leave the skin. Then smoke cook it in just a basic smoker, with birch wood, season with just salt, black pepper and butter. Delicious basic thing common in Sweden!

That soft fin is an adipose fin like trout and salmon have. It's used to sense pressure and vibrations in the water. Nice to see you cook the fish Cantonese style.
One tip for you. The fishing part is edit perfect.... The kitchen cooking is edit perfect... Eating should be edited better... Like three bites no introduction a couple of yum yum drooling... And then the talking... No waiting no slow spoon to plate to awkward moments.. just chewing and biting lol maybe some fork action... Lol great stuff know I'm hungry for some fish. THANKS GRRRR 😂
