I’ve spent 25% of my life living in China. When I first got there over 10 years ago I was taken out to dinner and this is the dish we were served (Beggar’s Chicken). The clay covered chicken arrived on a cart and they let me go up and crack it open with a hammer. It completely blew my mind and I remember absolutely loving it. It’s funny though, that was the first and last time I ever ate it while living there and I had forgotten about the experience until recently.
Where did Beggar’s Chicken come from?
There’s a few different stories but this is generally how the story goes. Thousands of years ago a beggar was able to get his hands on a chicken but lacked any pots, pans or utensils. So he covered it up in some clay and cooked it in a fire.
Is it practical?
Wrapping the chicken so many times prevents steam from escaping and the lotus leaves make a dramatic difference in flavor. You could certainly achieve similar results with modern day equipment. But honestly there is nothing more fun than cracking open a clay covered chicken with a hammer.

Don't concern yourself too much with leakage from the newspaper ink. Most newspaper inks are soy based and non-toxic. This was a change made by most printers back in the mid 2000s to address severe skin reactions with traditional petroleum based inks.

Wow this is so amazing! I'm Chinese, but I've lived mainly in the U.S. and haven't been home for years. It just feels really different to see my favorite RUclipsr showing some authentic recipes.
Having a chinese Mother, I already kind of know how it tastes, even if I haven’t had that specific dish, since my mother used pretty much every ingredient in this video almost every day.

Do a leg of lamb in clay. The Pacific Islanders (Fijians and Samoans) do it an interesting way if you don't want to use clay again. This was an excellent video 😀👍

Counting my 8th in Shanghai, China. Love Chinese food. Never tried beggars chicken but looks like a must try here. Hope I can find it somehwere.
First of all, beggers chicken is really indeed a very famous Chinese dish, which has been featured/mentioned in a lot of Chinese TV drama series. However, I was born and raised in China, yet I've never had this dish once. lol
Idk about china, but this method was used to cook whole hogs. One of the main purposes tho was to avoid skinning or burning off the hair prior to preparing. The whole pig, hair and all, is coated in a slurry and clay. It isn't wrapped in leaves or anything first like this video. In the end the hair is cooked into the clay basically removing it from the flesh. I would imagine the story of beggars chicken is proving that same purpose. It says in the story the beggar had nothing to prepare the chicken. Meaning he had no way to skin or pluck it. The clay method probably de-feathers chicken the same way it de-hairs a pig. I also have read of one person doing this with whole fish and it "removes" the scales. Long story short I'd say this method was an easy preparation free method of dealing with a whole animal. I saw an episode of WORTH IT where the group went to Japan and had beggars chicken and at fine dining restaurant. But they didn't seem very impressed by the actual chicken. They were more interested in breaking the clay. But their desert was the most impressive dessert I have ever seen. That was the only other time I have seen beggars chicken, and that was a while ago! Great job Max!! (did it REALLY NEED the liquid smoke?!?!😖)

I saw and tried a very similar technique in a Tuscan cookbook. Traditionally they used clay, but the cookbook said you could use a salt and flour dough as a substitute for the clay. I made it a few times (a lot of work) but it is a cheap and easy substitute for clay. The chicken wasn't salty at all.
One thing all of these videos do well, they make you hungry, well done.

this is very cool. i'm thinking of trying these recipes with a clay cooker (romertopf) and prepping the meats through the lotus leaves wrapping and omitting the newspaper, to make it more than just a very special occasion dish.

A brisket in clay would be interesting. Maybe try to put wood chips in the inside of the clay to help get some smokey flavor? I always brein my brisket for at least 24 hours. The brein is water, salt, vinegar, brown sugar, garlic, lemon, cloves, and cummin. I bet it would be amazing cooked in clay
The wood would be wasted. The clay mostly steams with a controlled temperature based on the limited temperature the clay and water can reach under the fire conditions.
Doesn't the wood actually need to be smoking in order to get a smoky flavor?

Reminds me of more primitive but refined version of what I've done while camping just wrapping some local root vegetables I would find with whatever I would hunt or catch in some foil and burying that in the ground with a bed of chars on the bottom and top covered by a last layer of soil

My aunt cooks suckling pigs stuffed with smoked bacon fat seasoned in a bit of pineapple and spices then covered in clay. Then buried in a fire pit an slowly cooked it over the course of an entire day. It's... freaking amazing. When done right it's like cracking a meat geode full of meat juice. Served with home made tortillas, it's to die for. I'm hungry now.

the first version of beggars chicken is actually with no lotus leaf, the covering dirt is basically seasoned and moisted as clay, cooing from chicken without feathers removed, and after the chicken is fully cooked, cover layer with feathers and skin is all removed, and meat is seasoned and cooked without any dirt
Where did you buy the clay for this... I can find the lotus leaf on Amazon, but I can seem to find cocking clay
