@@bumm1n377 Not really HARD but it can be stressful due to how much is out of your own hands like fermentation rate. Between the King Arthur channel and Weismanns video on it, you can have a good easy start i'd say and every loaf for the first year is better than the last

No way - your tomato ratio is exactly perfect in relationship to the bacon. The tomato provides that cool, crispy but soft, gently acidic bite to balance the rich, salty bacon. BLT masterpiece.
Editing was SUPERB, and the cross-section on the brisket after was a treat.

Try thin slicing and cutting out the guts
Honestly a bit of brined cucumber is a good stand in (I often have to come up with allergy substitutes for people I cook for)

I fell in love with beef bacon in the Middle East and Africa, but I have this strange feeling even the best examples there weren't close to this.

Tomatoes are one of those things that need to be eaten really fresh to fully appreciate. Eating a tomato off the vine was probably one of the best food experiences I’ve had. Highly recommend anyone to get a tomato plant, very worth it.

Honestly love to try this with some rye bread but like the whole rye kind of rye bread . And not bake the bacon , just smoked is perfect. Couple it with a bowl of pea soup (the bound ones not the unbound) and you got yourself the perfect winter dinner.

I like the tomato juices to soak into the crispy bread. Always go heavy on the tomato. Two layers with the B L in the middle.
