Lovely! Reminds me of our years living in France. :) I love the tips for poaching an egg. I have succumbed to using special silicone egg-poaching cups, but they are kind of a pain. I will try your tricks and see if it turns out to make the cups a thing of the past. :)
The lardons are not fully rendered here because you started with a hot pan, if you start them in a cool pan and let them heat up together all of the white fat will be properly rendered next time. Thanks for a great video- I always love recipes that remind me of my time in France. Please do more french food in the future!
Thanks for the poached egg tips. What is that perfect tool you used to pick up the 2nd egg? I finally gave up on my lettuce this season. Thousands of earwigs we just couldn’t get rid of. They just swarmed. 😔
Because of laziness, I just put eggs in a reynolds sandwich bag then boil it to make poached eggs, but now I'll definitely try this for a change, Thanks for the tip and for the recipe Kevin! It surely looks delectable!. Btw where do you buy garlic paste?
Hi Zach! I think garlic paste is available at most grocery stores. Even my local, poorly-stocked supermarket carries it. Brand name is "Gourmet Garden."
I have had this in Paris at one of the wonderful bistros served in a clay flower pot.

Ha! I had to look up the name of the tool. Although I refer to it as a "slotted spatula," officially it is a "Skimmer Spoon."
