  • In this episode of The Best Laid Schemes, a cooking series inspired by the lands and lochs of Scotland, I’m making a dish inspired by Scotland's forests. The edible forest floor dish is made up of a chocolate mousse mushroom, a chocolate log filled with rosemary and chocolate whipped ganache, edible moss made from blitzed up rosemary shortbread, chocolate twigs made using a technique that involves cold vodka to set the chocolate rapidly, a dense chocolate sponge cake and edible chocolate leaves.

    I've lived in Scotland for the past few years and wanted to create this series as a love letter to the place I call home. I had originally intended to film and create the series in Scotland but when I came back to Canada during the pandemic I found myself unable to return. I decided, instead of feeling down about it, I would create something.
    This is the first of what are hopefully many seasons of Chef Studio, an immersive food and cooking show focused on creating dishes inspired by the world around us. Each season, the subject will change and the subject can be almost anything. This season is inspired by the lands and lochs of Scotland.

    When I accidentally stumbled across this video, I absolutely fell in love. I have never seen anything quite so magical. I just HAD to make it.
    I spent a few days, slowly making each of the elements.
    Every single recipe is perfect. The cake is rich and dark, and a great texture.
    The shortbread is crisp, buttery, and the underlying rosemary taste is amazing- it takes this dish to next level.
    The twigs and logs were so fun to make, and were new techniques for me. I made the ganache to use as filling for the logs, and the rosemary taste paired so well with the chocolate! But the logs were so delicate that I didn't end up piping the filling in- I was worried they would snap. The logs still tasted great.
    The leaves had a faint mint taste, really lovely, not overpowering.
    It took me a few go's to get the mushrooms right, and you have to make sure they are really frozen when you dip them into the melted chocolate, so that it snap dries quickly, before the mousse gets too soft. But the mousse tastes amazing, and the glaze was so pretty, and again, it was all brand new techniques for me, so, very fun to try.
    Every element worked, every recipe is perfect. Thank you for all your work to get this right.
    Yesterday, I put it all together- we built it in front of our ten guests, and it was absolutely magical and sensational. When we unveiled the mushrooms at the end, everyone gasped! Everyone loved taking little bits and trying each element. It was a hit!

    I love this concept, Katherine. Especially the infuse of rosemary and cream, also the vodka-chocolate sticks... A few years ago, in a food event here in Rome, I tasted a similar dessert that blew me away. It was called "Sottobosco" (undergrowth) from restaurant Il Convivio, and despite having various similar/different ideas what I kept in my mind were two things: the first was a surprisingly good mushroom flavoured sweet meringue (I guess they used dust from dried porcini), and the second was the smell of it all.. I asked what it was to the chef. He confided to me that on the edge of the plate puts a tiny amout of diluted pine oil, using a sprayer. You have no idea of how much difference it makes to actually smell the forest, before eating it! Hope you'll find this interesting and inspiring. I love your works, keep it up!!

    I'm quite new to cooking, pretty much no experience in baking or pastry, but because of corona I've put a lot of time and effort in the growth and development of my skills and understanding of the processes involved in making good food with the main rule being to just try making everything and anything I think is nice myself. 2 days ago I overheard the term 'molecular gastronomy' for the first time and after digging into it I ended up at your channel.     Hi. Beautiful work. I have a question in regards to the glaze though. One usually ha to make sure the the glaze is between 32 to 35 degrees Celsius before applying it to the frozen mousse. Is that the method that you also applied here? Thanks and keep up the amazing work.

      I know you commented 2 years ago but hello
      The method used is seeding which you can look up.
      Basically you separate your chocolate into 3/4 and 1/4.
      Melt the 3/4 using a bain marie and then add the non melted 1/4 slowly. Stir continuously.
      Because the chocolate is tempered before you melt it, that 1/4 will "teach" the rest of the chocolate to be tempered.
      If chocolate is properly tempered, it will be shiny and set within 3-5 minutes.

    I made your meringue 🙂 a little bit too thick , so ist was 4 hours in the oven 😂 yeah my fault 😂 My dessert will be meringue Sheets as foundation, caramel icecream with strawberries on top . Thinking about roasted and chopped Peanuts maybe little bit salted
