Pupusas are my fav I could eat them everyday we have a El Salvadoran couple that do cheese and beans and cheese and spinach pupusas here In Australia at a farmers markets and he puts his homemade chilli sauce on top of it it's delicious I'm hungry for one now I'm off to to the markets now to get one 😂
Get yourself some cheese with LOROCO if there is a Hispanic grocery shop around. It adds to the authenticity. Also OAXACA cheese is a good substitute with some COTIJA and some central american cream also go really well in the pupusa. Also refrying the beans until dry is what my mom does, it just tastes way better in the pupusa. If you can get your hand on some Salvadoran style chicharron molido you also in business.
We are Mexican but my mom always made these growing up and we loved them, thank you for explaining the process so well! Now I want to make these for my kids they would love them!
I've found that a quarter cup of AP flour and a drizzle of oil in the masa makes for a much more pliable and forgiving dough. I've got heavy hands and even tho I've been cooking pupusas for some years, I still need all the help I can get! It does change the texture a tad but I actually like a slightly crispier outside.
There's no need to add all purpose flour. You just have to make sure that the dough is very smooth and moist (there should be no cracks) that you smooth out any lumps, and that your hands are constantly lubricated with the oil and water solution when forming them. If you want to use flour, and have something similar to a pupusa you should try to make Georgian megruli khachapuri.
I got to try papusas at a local restaurant. Love them. They have shrimp, chicken, shredded zucchini, pork, asada, beans, spinach. All with cheese also. My faves are the shrimp ones, chicken ones, and the zucchini ones. Very inexpensive, from $1.25 to $3.00 each. They are so good.
