So made these today and the paté but had to use pecans instead of walnuts. Still turned out amazing! This sandwich is truly delicious. I literally are two today and made some for family as well. I love your show and recipes! Thank you 😊

In Hawaii they pickle daikon with the carrots. I love it so much and now know how easy it is to make. I’m wondering if the daikon is a Hawaii thing since you didn’t add it. Love that you’ve veganized these favorites. I have missed them so much!

Yes, sometimes we use Veganiase in our banh mi. Lately we've been making the onion oil and find it tastes better than vegan mayo in the sandwich... but both are good!

You guys are awesome :) Cilantro is one of those herbs that you either love or hate. I'm one of those that hate the taste...it overpowers everything to me....I'd love to try this dish if i could exchange the cilantro for something else....do you have any suggestions for an alternative herb to put in there?

Thanks Beth! :D We prefer olive oil for dressings and drizzling on foods. For cooking we usually use grapeseed oil, sometimes coconut oil but the coconut smell is strong for some foods.

Banh mi chay in Vietnam only uses fake meat, never tofu (though it does look like a good twist on it). Also, leaving out the daikon loses a lot of flavor in the pickled vegetables. Most places I go to now also make their own vegan mayo in addition to the pate.

I make mine using finely sliced onions with fresh grated garlic, touch of sugar, red wine vinegar and little olive oil and marinate for a few minutes.

How long to you keep pickled carrots? Can you make a bunch ahead of time and keep in the fridge?
They last quite a while so long as they remain refrigerated. They could last up to a year.
