    MAMA'S MEATLOAF (Vol. 3 Cookbook Recipe)
    1.5 LB. GROUND BEEF
    2 EGGS
    1/2 SLEEVE OF SALTINE CRACKERS (ZESTA)
    5-6 SHAKES WORCESTERSHIRE SAUCE
    1/2 TSP. SALT
    1/2 TSP. BLACK PEPPER
    1 PACKAGE ONION SOUP
    1/2 TSP. BADIA ROASTED GARLIC POWDER
    Mix all ingredients well, then place in a loaf pan and bake at 375 degrees for 40 minutes. Take out and drain off excess grease. Put topping on (recipe below) and bake for 10 more minutes.
    Meatloaf Topping
    3/4 CUP KETCHUP
    3 TBSP. BROWN SUGAR
    1/2 TSP. ONION POWDER
    Whisk all ingredients well and put on meatloaf for the last ten minutes of bake time.

      I pan fried and caramelized the onion, then put in mixture. Would like to try adding pepper per your suggestion. Some shredded carrots will add some color too.

    I'm my mother caregiver and she has Alzheimer's so I would play a lot of your videos because your voice just make her smile ! Oh she laugh out and be so happy! She's 89 yrs and has been bed confined for 6 years in her home! Thank you Tammy.

    As a kid I remember mom mixing lightbread with the meat to stretch it.

      Lightbread, now there is a word I have not heard since my childhood. That's what my folks called white bread.

      Mom was right about white bread. I put 2 slices in blender which turns into bread crumbs. This does look good.

    I am forever seeking out meatloaf recipes, so I am very thankful for this particular recipe. When I put a ketchup- or tomato-sauce-based glaze on my meatloaf, I always try to incorporate brown sugar in the glaze, so I think that this will wind up being really good!
    I think that my mom has spoiled me where meatloaf is concerned. She always had a pretty simple meatloaf recipe (which always had plenty of green peppers and onions in it) and though I watched her make it many, many times, I could never seem to make my meatloaf the way she made hers!
    It’s been over 9 years since she’s passed on and I still try to make my mom’s meatloaf but it just always seems to be missing something...and now, I know what’s missing: a mother’s love.❤️

      When my Mom made hers, it was 1lb ground beef, 1/2 lb ground pork, and 1/2 lb ground veal. That's what I miss about the taste of mine!

    I cooked the meatloaf tonight and it was delicious! I made it with mashed potatoes, French green beans and a salad. Perfect. I just finished eating.

    Nice recipe, similar to mine, i like a chopped onion in my raw mix, also folks, when mixing raw don't over work the meat cause if you start squishing it thru your fingers you will end up with a dense brick meatloaf like some folks i 've seen(handle like biscuit dough) Also, if & i say if you have leftovers, put in fridge & next day have a meatloaf sammich between white bread & and some mayo, delicious.       I ordered this one time in a restaurant . They had hot beef or pork too. They were great !😋

    This is my meatloaf recipe too with the onion soup mix. When I was growing up my friends always said my father made the best grilled hamburgers...it was the packet of onion soup mix they didn't know about. Lol 😆

    I use two Post Shredded Wheat biscuits in my meatloaf instead of bread or crackers. My mother-in-law taught me how to cook and I absolutely loved her meatloaf recipe. She passed away July 2020 at the age of 96. I still make all of her recipes, especially her meatloaf recipe with the two crushed shredded wheat biscuits.

      I saw another video where a woman swore by using crumbs from Corn Flakes. I'd like to try your suggestion as well as hers and compare them.

    I was always taught to break eggs in a different bowl before adding to the other ingredients in case the egg was bad. You don't want it ruining your other ingredients.

    Haha...we call it “wash yer sister” sauce!! This is how my Mama made meatloaf, except she never put a sauce on top and she did add a small chopped onion. Thanks for the yummy memory!! I will have to to make this soon! ♥️🥰🙋🏻‍♀️

    did. Except I put a slice and 1/2 of bread under mine to help soak up the grease. I do
    use 20/80 percent hamburger. Love watching you.

    Gonna try this version....my mom's meatloaf was the best...she used:
    Onion, green bell pepper, salt, pepper, onion powder, cumin, chili powder, Worcestershire sauce, tomatoe sauce, 1-2 eggs (depending on amt of meat) and saltine crackers. Cumin and chili powder make this meatloaf and you don't need much...just enough for flavor.....and it won't taste like Mexican food either, just good!! Oops, and sometimes we also added some catsup and mustard to the meat.
    Tammy I love watching you cook, my dad was from Georgia and my mom from Texas and it was always homestyle cooking from the south for us, you cook like we do and I love it!!

    My mum used to add a layer of very thick sliced potatoes to the bottom of the loaf pan then covered those with tin foil that had slits cut into it.. when the meatloaf was cooking the grease would drain down into the potato slices and she used the foil to lift the meatloaf from the pan. I still do this today.

      Thank you for sharing that. Even these loaf pans with the lift out base couls use the potatoes underneath. Around here, the only ground beef that reasonably goes on sale is 80/20 and it has been too much grease for meatloaf.

    THANK-YOU for the cracker crumbs!!! They turn out completely different than bread crumbs. It's the way my mother (who'd now be 95) and my gifted cook of a grandmother (125, but she was always a little vague about her age) did it.

    How to pronounce worchestershire? First say Wooster, as in Wooster College,
    Wooster, Ohio., Massachusetts and all the other Woosters out there. Then say “shire”.
    So, it’s three syllables: Woost er shire. Love you guys!

    many thanks for this. I learned to use the foil rather than placing the loaf in the loaf dish alone. also ty for the part about topping with bacon.
    my ex used chili sauce asa topping on the loaf. also I have done cheese slices in the middle and on top.+
    keep in mind I'm a male and hardly consider my self a good cook.
    after my div. I had to learn to cook or starve.

      I agree, very well done! Nice editing, and I love that she shared the recipe. Something came up on my feed...Grey Goose, I don't know, but she was making a jalepeno pepper jelly. The camera work was nauseating and then in the description she states that she won't share the recipe. Hmph. This woman here is a class act!

    Yum! This is how I make meatloaf. I usually add about 1/2 of a bell pepper that is finely chopped. You got me craving meat loaf now!

    I make a box of stove top stuffing mix, and mix it with my ground beef... don’t need anything else, except maybe some worstershire sauce... no egg, not needed... it’s SO good and there’s different flavors of Stovetop... I love the SanFrancisco, turkey, or pork flavors... I know I know, but at least TRY it before y’all start throwing stuff at me!!!OK?♥️

      I tried for the first time using a box of stovetop Pork flavored and let me tell you I do not advise. The meatloaf was awful
      You may like it but for me I'll stick to flavored breadcrumbs.

      @@suecastillo4056 actually I put in in the food processor and ground it up and then added it to the chopped meat. I didnt cook it, is that where I went wrong? Should I have cooked it first?     I just made a meatloaf using your recipe and I'm very pleased with it. I followed your recipe to a T except for using 1 pound of ground beef, a half-pound of ground pork and a half pound of ground turkey. I used the same amounts of the other ingredients in your recipe even though I used 25% more meat. The meatloaf was still good. Also, you say to use 1 teaspoon of salt in this clip, but your website says to use 1/2 teaspoon, so I used 3/4 teaspoon of salt. The only thing I would say is that I didn't need nearly as much glaze as used in this recipe. I don't like to waste ingredients, so the next time I make it I'll use 1/2 cup of ketchup, 2 tablespoons of brown sugar and 1/4 teaspoon (rounded) of onion powder. If that's still too much, the next time I'll use 1/4 cup of ketchup, 1 tablespoon of brown sugar and 1/4 teaspoon (level) of onion powder.

    My Mother made her meatloaf very similar to yours except, she added diced green pepper to the meatloaf & draped bacon over the tomato ketchup on top!!

    I use the recipe my grandma my grandma did. She used ritz crackers and onion, tomato sauce, eggs , pepper and salt. She came from the back hills of Kentucky. Best meatloaf nothing fancy just yummy.

    Being from Louisiana, meat without finely chopped onion is a travesty! Am going to try this as soon as I can go get the ground beef.

    My mother used fresh ingredients such as fresh onion in her meatloaf. She would use tomato sauce on top nothing else.But she would put some tomato sauce into her meatloaf as well. I know what you mean about meatloaf sandwiches, yummy! I like mine with mayonnaise. I really like the pan you were using. One day I may just buy one of those.

      I said a my onion before I put it in my meatloaf. It just cooks better in the meatloaf.

    My Mom made meatloaf with boiled cabbage and chunk potatoes with a tomato soup gravy with fresh chopped onion sauteed in butter. It is fabulous.

    Haven't made meatloaf in a while. Like green beans & mashed potatoes or baked beans & mac 'n cheese. I enjoy meatloaf sandwiches too! Definitely gotta have ketchup topping!! 💕

    First of all. You are fine, so keep doing you. This is some info that may help or not. Worcestershire is a place in England pronounced Wooster, like rooster. Shire mean small town, and it is pronounce shure.
    Ergo: wooster-shure sauce.

    A friend of mine uses saltines also. He prefers them over any other thing. Beautiful when served. I love tender meatloaf that sort of crumbles apart.

    my mom skipped the soup mix. chopped up onions and hamburger sliced pickles instead. along with powdered onion and garlic. also made it in a turkey broaster so it was big enough for sandwiches for several days.
    heavens i forgot the most important part the bacon strips on the botton and top...

    Oh girl looks really delicious. I make mine with crushed up cornflakes. That's how my husband's mom made its the only way my family will eat it. My momma made it with oats.

    We cook rice with our meatloaf and also use 1 regular can of tomato sauce to pour over top about 10 min before we take it out. My bunch likes the sauce over the rice.

    If you’re adding brown sugar and spices to your ketchup, try using kraft brown sugar BBQ sauce instead. Yummy!

    My dad used to call Worchestershire...."What"s this here sauce? LOL. MEATLOAF LOOKS GRAND! It is one of my absolute favorite dishes to make. It makes a grand sandwich for leftovers also.

    Try crushing those crackers in a plastic baggie first and finely chop some onions sautee cool then add to meat mixture try a little milk in that mixture to soften it up thats alot of beef and a squirt if yellow mustard and ketchup

    You should try the old Italian secret to Meatloaf and meatballs
    3 or 4 pieces of bread soaked in milk , , I know this sounds crazy but this makes meatloaf so tender , , do try it .
    Heard about it for years to do this and then one day I actually did it and now all I use in my meatloaf or meatballs ,, milk soaked bread

    Hi Tammy! I'm runnin' behind but wanted to drop by and let you know this meatloaf is delicious! My aunt made a meatloaf using crackers that was very similar to this. It was always soooo good! She always served with mashed potatoes, green beans and hot rolls fresh from the oven! Just the ultimate comfort food! And, we also made and served up a couple of your chess pies for dessert! No leftovers!! Thanks for another video, y'all!! They're always great!

      @@debbieacosta6645 I just made my 1st meat loaf at the young age of 49. This recipe was delicious. Mine was a little crumbly and I am sure it was because I left that 2nd egg out. I served it with BBQ sauce on the side and Italian green beans. Hubbs was licking the plate. I think the soup mixed in helped to permeate the whole loaf. Imma be keeping that on hand...LOL

      @@rosemarquinez1355 We like to use bbq sauce instead of the ketchup for the topping. It already has sugar in it so you can skip the additional sugar. The bbq sauce can be used to change the flavor to your taste.

      Felicia, Isn't it funny when we're young and first leave home, we swore we'd never eat another bite of meatloaf or soup beans (KY family of 7), but after being away from home only a short time and returning to visit, we have put in our calls ahead of time asking "Mama, can you make me some soup beans, cornbread and meatloaf?? I'll be home soon!"

    Your meatloaf looks delicious. I also make a sauce with ketchup and brown sugar but I also add a little bit of bottle mustard. It just adds the kick that we like.

    I am so glad I found this channel, having been raised right down the road from Polk County, your recipes are so much like what I was brought up on, my stomach is growling and rubbing my back bone just from thinking about these recipes that are very very similar to what I remember from my youth. Sadly mother didn't keep cookbooks other than the ones someone gave her but my wife put together one that we use from time to time and since finding this channel, good old Southern aromas are going to fill the streets in this small Illinois town we are living in now.     That pan would be GREAT for banana bread which, because of the sugar content of my recipe, tends to stick to the middle of the bottom of the pan! Gonna get one!

      I use very thick batter so it wouldn't slip through the holes at the bottom either. You could put a little parchment or wax paper down also if your batter is thin.

      I've got two, they work, if you are using 80/20 beef or more fat bend it like tammy did or put a small oven proof piece of cookware under the perforated piece of the loaf pan so the xtra grease does not get your loaf soggy.
