@@passportcookbook Well, I've managed to middle through once more. Awesome! I must say though, don't buy supermarket liver! Sliced way too thin, and frozen rock hard. I use recipes as a guide, so went sort of sideways, with a light roux, and braising the meat in the sauce. So more like New Orleans than Venice. LOL, in Natchez Ms Nawlins is closer!
