Why are we tipping servers a percentage of the bill?

Because a server has to tip out based on sales. Thus, you tip based on your meal cost. A server has to tip out the busser, the runner (if it's busy), the bar for alcoholic drinks, the hostess, and I have even heard some tip out kitchen staff. The tip out are all based on sales. Therefore, a lower bill means a lower tip-out.
I used to be a server, and that was my experience.

@@eliseeaddy I’ve learned this since posting this video. But the customer views it as something they earn for performance, not what they have to tip out. I think there’s a big disconnect there since the general person doesn’t know this.

No, you're not the only person who asked this same question. When I tip, I tip based on the amount of work that the server has to do to service our table. It's all a factor of how many plates he or she has to bring to the table. How many trips does the server have to make from the kitchen to our table? How often does he or she have to refill our beverages? How charming is he or she? Many of them will take off some of the prices on our orders. That happens quite often. How punctual is the server? How much trouble and bs does that server have to go through to service our table? I get all of those things that I'm asking here. You are right, though... why is it about the money the customer spends at the table? That doesn't make any sense. That server can still possibly do more work for the cheaper customer than the customer with a higher bill. It's about the work that the server has to do to satisfy her table.

@@cableapostle I learned from my very colorful TikTok comment section that they have to share a percentage of their tip with a lot of people suck as the busser, kitchen, table runner, and bar. They have to tip a percent of their sales so if they are tipped less than they have to tip out, they make nothing from your table. Does that change how you feel about it?

Ah - interesting . Makes sense.

Well. If you can spend more on the bill, then you can tip more.

tipping should not be a norm from the start, waiters and waitresses should be paid by the owner. You don't see people tip at fast food places and they work as hard as somewhere you will order from the table.

They are paid by the customer regardless. The cash is always coming from the customer. If the owner was paying the servers directly than prices would inevitably be raised and it would be passed off to the customer regardless. Plus, there would be tax implications.
