Shogo, this is a tragedy. I tried buying some knives from Yoshisada-san's store but they do not ship overseas (you need to enter a prefecture at check-out). Can this be fixed or is there a company that would ship from them to UK?
And please, if possible, make a showcase of their workshop. That kind of craftmanship is really rare and important to document.
11500¥
Is very reasonable as that about £70
15950¥
is about £95 to £100. For the pattern & such the price is fair but I'd pick the other one.
Don't know how he manages those prices as a knife is around 1/4 & 1/2Ib in weight on average so about 5-6 blades per kilo of steel.
A plain carbon 1KG billet is about £10 for machining stock be it round or square.
Add the fuel cost & any electricity for tooling then I don't now how the fella turns a profit after tax.
Mind i don't now what the Japanese price for coal or electricity is like compared to Britain but I also assume the tax & overheads is less.
Still can't see how the old lad turns a profit.
Hello, i live in Wollongong NSW Australia. I just went to the online store but unfortunately i can not read the beautiful language.
Is there any way to make a purchase for those who can not read the site please?
@@sarahpayne4099 Most Japanese blacksmiths don't sell directly to customers overseas/outside of Japan. They have agents that select vendors worldwide to sell their knives outside in Japan. These are reputable sellers in Australia:
Knives and Stones - Australia
Migoto Cutlery - Australia
Pro tooling - Australia
Zanvak - Australia (sharpening supplies)
Shop keeper was such a generous gentleman that hopefully this video generates more customers, I know I’ll remember to shop there and to recommend this place to people looking for gift ideas👍
A real gem of a shop you found there. Hopefully you attracted some new customers with your visit. Real craftmanship is to respected.
*Harumi
I am ordering! So yes💪🏽🤪
Man I would like to visit too
He did attract a new customer. I'm going here next month!
Those shop owners were so cute and kind to give those knives as a gift omg, I would just want to buy everything from their shop after in thanks
I teared up a little when he gave you the knives as a gift. That's so kind! When I was in culinary school, a lot of students wanted German knives. However, there was a small percentage of us - myself included - that felt just as strongly about Japanese knives.
I was just as surprised as you were Shogo that they gave you the two sets of knives. It was so kind of them to give Tomoko one and your wife one as well.
I’m definitely going to buy something from their online shop. So please let them know that someone in America was so impressed by this video and their kindness that I am going to buy my next knife from their shop
Thinking the same. I already know various people who will receive authentic Japanese kitchen knives for gifts purchased from true artisans in Kyoto and shipped to USA. The knives are worth it and the gift is a classy way to say to the recipient that, "You are worth it," or in other words you are loved and you warrant a special gift like this. The gift will include a link to this video!
Well i hope you meant to the continent because i am saving to buy at least one.
Japanese craftsmanship has always impressed me. Quality products come from quality people.
I am in love with that shop. The pattern wielded designs and the skills on display is so clearly superior in quality. Even the salesmen was great. Don’t let his smiling eyes fool you that is a real business man as hard core and capable as that knives were great.
another store for my list to visit when I go to Japan. Thank you Shogo and Tomoko and the whole team
I called them. They speak English and are happy to ship when they get too
Most of my friends who are work as chef mostly always hunt for kitchen knives when they went to Japan. I'm not on to it but i guess the sharpness and quality of Japanese kitchen knives is really the best one .
As a blade enthusiast I was glued to the screen picking out favorites.
Its truly an awe to see how the art of katana-making still survives for more than many centuries and up to today like this shop.
Props to the shopkeeper and his fellow staff for keeping the tradition alive!
Who's going to tell Shogo he is already at 1.19 million subscribers? Though I imagine with his health this episode was done before the one-million! Congrats!
I've been on the lookout for a Japanese knife, glad to learn I don't have to spend a fortune on one. Amazing to learn about gems like these.
I'm so early, Oda Nobunaga was still known as the "Fool of Owari"
It's so cool he gave them to you as a gift! He earned my business and I'm planning on buying a knife from them soon!
After years of hearing nothing but “Use Henkel!!” I was skeptical about Japanese knives, thinking they were just a trend. They are not.
Actually Zwilling J.A. Henckels is also selling Japanese knives since the company bought Miyabi back in 2004. The Miyabi knives are still produced in Seki, about 60 km Northeast of Kyoto, Zwilling knives are made in Solingen.
Thinking about the "trend", it is always funny when east asian business people or tourists are buying WMF cookware, Wüsthof knives or Zwilling knives in Germany while the Germans are buying Japanese knives.
@@mario27171 am an old kitchen rat myself and love HZ, and LOVE the Japanese blades they sell💪🏽
He seemed so happy and honoured to be able to give you those gifts. Amazing! Oh man, you could instantly tell that cutting with the new knife was completely effortless. I hope lots of people go to that shop and buy knives after seeing this video.
That's one of the most beautiful knives shop I have ever seen ! Thank you very much , Mr.Shogo ! You are the best ! And the owner of the shop too ! He is pretty kind !
I'm so glad this shop has an online presence! Now I know where to buy more kitchen knives to replace the old cheap ones I've had to use since in the past I was too poor to afford nice knives like this.
Like, seriously, I have handfuls of dollar store paring knives that I've slowly been replacing as my budget has improved, and I really look forward to stocking quality like this. I hope this shop does very well in the future, they look so impressive and beautiful.
What a gracious and generous man the proprietor is! (Shogo, next time you must try a visit to a car manufacturer. 😁)
This shop is 100% on my list to visit when I someday visit Japan
This is a candy store for anyone in the cooking industry🤤🤤🤤
*Swearword, *profanity, e.t.c. what an awesome store. The coolest craftmanship assortment i´ve ever seen. Totally a touristdestination just to drool on the cabinets.
Looks like a great show! The owner seemed like such a kind, generous man. Loved his craft and sharing it. That huge mochi knife was awesome, and the littler one was so cute.
Such a kind and wonderful man to gift you and Harumi two beautiful sets of knives. Thank you so much for showing us this amazing shop ❤️
I’m telling you this Hidden Gem series is fantastic! You’re showcasing people from the Kyoto community and that’s important. Please don’t give it up!
THANK YOU!!!! ❤️❤️It is so difficult to find authentic Japanese knives! So many scams 😞
Specially after Shad analyzed the Kamikoto knives a couple weeks ago
@@jackmcslay Yeah free Coles knives for the win.
Beautiful ❤️. Thank you for this episode. Teach us how to sharpen Japanese kitchen knives.
It's amazing to see inside the Yoshisada Knife Shop and rarely see sharp kitchen knifes. I've actually been there before in Kyoto and my experience in seeing these sharp kitchen knives is truly great and astonishing as well. They are very useful for cutting vegetables especially bamboo!
I have to say that I am noticing a significant improvement in the presentation and editing for these type of videos. It was probably a lot of work, but it made the experience a lot more engaging, so I really appreciate it. Really enjoyed this one!

Wow I remember when I was a child I help my father make knives in our shop.
After seeing that demonstration of how smoothly Yoshisada's knives cut as opposed to the older knives you have
I'm sure they'll be getting a lot more business from you

Wow this is such a great video. With each one of these Kyoto hidden gems videos I think more and more that when I get in the JET program I will have to request a placement nearby!
Those were some amazing top quality knives! And the owners were so polite and friendly!
Beautiful knives! 🙂
He has some beautiful work in there. I really like the knives for cutting frozen foods. Really interesting idea and a really aesthetically pleasing execution.
Super cool 👍😊
I can't wait to order some for my son an daughter's families.
Thank you.
It's wonderful that those knives are so light! Very useful for someone with mobility issues. I can't wait to visit and pick out a wonderful knife. 😊🔪
Impressive knives.
Shogo-san, you lucky!!! I loved that knives, utsukushii!
Kitchen knives with the art of Katana.. Nice..
Loved this video! The shop owner was wonderful! I would love to visit this shop. I looked at their online shop and they were sold out on some items I liked. I will need to revisit and see if they can ship to the USA. Thank you for these fabulous videos. 🙌❤
Loved it! G
Very cool. I love knives and i have a nice collection. My favourite one is a wakizashi style that I use for hunting. I feel that it would be such an honour to own one of these knives!
The coolest part is the aesthetic that goes into these, like how they make different patterns depending on the season.
Wow this is so cool 😅
I LOVE TO HAVE THIS KIND OF JAPANESE KNIFE...💖
Wow! I don't think I've ever wanted to go to a shop this much. I have a Japanese knife at home that I absolutely love but really I want two or three from here now.
I like them all, and the frozen meat knives are awesome!
wow this is so cool
Japanese iron sand contains vanadium. Folding causes the vanadium to diffuse finely, giving the steel grains a finer metallic structure. Due to the effect of vanadium, the blade can have excellent hardness, abrasion resistance, corrosion resistance, and toughness, and it becomes beautiful when sharpened.
When a craftsman hits steel with a hammer, excess carbon is emitted along with sparks, and the appropriate carbon for kitchen knives is adjusted to 0.1% to 0.3%.
Vanadium has been detected in ironware from Japanese ruins in the 3rd century.Japan used iron ore before the 3rd century, but iron sand after the 3rd century.
Hitachi metals analyzed the Japanese steelmaking method and developed Yasugi Specialty Steel. Yasugi Specialty Steel is used in various applications such as cutlery steel, materials for high-end kitchen knives made in Japan, materials for razors, materials for automobile parts, automobile engine parts, and aircraft engine parts.
Yoshisada san was very generous! 🥺🥺 anw this video makes me want to buy some of those kitchen knife hehe
Cool video
So awesome! Bet he would sell out on the internet!
that's so cool
Here in Europe, Japanese cooking knife is basically a "Brand" they are put in a nice wooden box or even have their own "scabbard". Cost a bit expensive and mostly used as a gift. Just like how valuable katana used to be given. As a gift. Although professional chef do use them for cooking and would maintain it regularly
I own a Japanese made knife like these 🔪
Best made blade I've ever used in the kitchen 👍
GREAT video man! I LOVE knives of all kinds and, as with almost everything, the Japanese do it better than anyone else...lol. I really like a nice convex grind on an edge...I get better chopping and cutting separation with them.
Interesting to know.
Haha, in a vacation in Japan, I would buy the knife set for my family cooking!
So generous, not a surprise in Japan. Thank you Shogo. There’s enough room (tang?) to fold your fingers over the haft so you don’t have to worry about your knuckles hitting the cutting board.
Omg! I bought two knives from them back in 2019! I was walking down the road and passed by their store and had to get one!
Excellent video! I like to find old 1970s Japanese kitchen knives in thrift stores - for 1.50 USD or so, you can get some nice knives. (They will need a *lot* of work to re-sharpen, but worth the effort compared to most modern knives.)
One minor correction -- single or double *edge* refers to the number of cutting surfaces - the edge itself, is single *bevel* or double *bevel.* A katana is historically, single edge, single bevel. The "vegetable knives" are single edge - *double* bevel, for easier (safer), more uniform cutting.
This reminds me of the Japanese cleaver that my dad inherited after his dad passed away a few years ago.
This gaysian does great 👍 work ! Love ya
OMFG my yanagiba is there. Coworkers bought me this knife from this shop years ago. Wow my knife is famous :D
I know where I'm getting my next knife!
