In this video I compare the sharpness of Sony's 50mm E Mount prime lens to a vintage Prakticar Pentacon 50mm F/1.8, which can often be bought used very cheaply.

Thanks for the comparison. Currently I have a 15-45 f/3.5-5.6 kit zoom lens on my EOS-M, do you think that I could create better quality photos with the Pentacon? I know that the wider aperture would give narrower depth of field and faster shutter speed at low lights but in terms of sharpness would it be better than my entry level kit lens? (I have absolutely no experience with prime lenses).

For the price, then for what you can learn with any manual focus lens, I say GO FOR IT.
      Simple answer is YES.
Don't forget that pentagon lens or for that mater, any similar FL, F # manual lens, can take your quality of videography, in entirely new level.
But to answer you specific question on sharpness: If you stop down this Pentacon to about F 5.6, where your kit lenses' F starts (To be fair for comparison), as you see in this footage, in comparison to Sony's much better prime, lens, you don't see a difference and more likely than not, you have a tad of better sharpness here, compare to your kit lens (That has lower sharpness and IQ than Sony prime 50mm).
All the larger F of Pentacon, as you said, are huge bonus here, to open your horizon in lower light situation, with trade off being some loss of sharpness, some more Chromatic aberration and nothing more. Over all & in total evaluation, I would say, Obvious benefits.
But please understand you need to learn about critical focusing or you will be calling OOF (Out off focus) images that are operator error result, interpreted as "Less Sharpe", wrongly. Learning to manually focus is Not difficult at all, if you are willing to learn. Using your magnification set into a custom bottom or / and using focus peaking, if your camera body offers that (Sony mirrorless such as A6000 or up series do excellent job here).
Again short answer: YES. And if you can find an almost clean lens, at this prices, its really no brainier.

Your other option is to go with Canon's other M mount lenses and Canon has many good choices (I am familiar with their Canon EF-M 22mm f2 STM Lens that is one excellent walk around and landscape lens), if you choose to PAY a lot more but retain your AF and electrical coupling with lens.
