I made this soup today. It was my first time making it and never really new how. It turn out so well we really had nothing left. I have a 13 year old son who is Austic and won't eat spinach and he ended up eating 3 bowl of it. I'm planning on trying alot more of your recipes. Its been so hard to find easy recipes that are affordable and easy to make. You make them look so easy and fun. I want to thank you for making cooking and baking fun for me again. Please keep them coming.
@sunbakedglory hi there, pancetta is and italian bacon, its very similar to regualr bacon the only difference is that pancetta is not smoked. but if you cant find it go ahead and substitute regular bacon. Hope this helps and as alwasy, thank you for watching! laura :)

This is a lovely recipe, but unless you are prepared to wolf down the whole pot, straightaway may I suggest using less stock in the dish and cooking your pasta on the side - and adding pasta to individual portions. Reason being - if you don't finish the pot, the pasta will soak up all of the liquid, go soggy and leave you with a thick minestrone 'stew'. (I know because this is what happened when I made it). Next time, definitely going to cook the pasta on the side. Thanks Laura !
I like seeing you go through the process of peeling and dicing the veggies. This looks great, I love minestrone soup! It would go nicely I think with your veggie stromboli.
Just made this recipe along with your cheesy garlic bread for my family, and it was fabulous. Thank you so much for this recipe, I will definitely be making it again!!
All these people...its too fat, its too oily, it has too many carbs...well yes, most delicious things do. You don't have to eat this everyday and in any case it's much healthier than burger king and mcdonalds. EVERYTHING IN MODERATION PEOPLE! Today you'll have a soup that has more carbs but for dinner you'll have a nice salad. MODERATION! You're amazing Laura, congrats on your show!
I made this soup this afternoon and it was delicious! Even my kids who hate vegetables loved it. I made some changes mainly because it was what I had on hand. I did not add basil and substitued it with a few leaves of cilantro and thyme. I added some zuchini , and sliced mushrooms. And instead of canned tomatoes I used 2 Large fresh pealed tomatoes I had orzo, and another type of tiny pasta. instead of diced pancetta I used it sliced plus and oz of prociutto because that is what i had. Yum
You've come a long way since this!!! I've been watching you since the beginning. I'm about to make this again cause I'm about to have oral surgery. Looking for nice soft food to make for the next few days.... I lost my written recipe so I came back here to watch..
I made this for my boyfriend and I and he said he could eat this every week! I only had enough left for lunch the next day. So it was very good. I did let it simmer between eating two different bowls and I think it tasted better. I also doubled the amount of tomato paste. I'll be trying more of your recipes!
nope...with minestrone soup, you can literally put anything into it. i've heard it said that it should never be made the same way twice. for me, i LOVE it with beans. garbanzo beans, cannellini beans, kidney. i also put zucchini, cabbage, sweet potato, cauliflower and/or corn. it depends on what's cheap and in season, or what i'm craving. when it comes to minestrone, it's all up to you.

Also, it calls for ground beef but I’m using ground Italian sausage. I know it’s like mid morning where I live but I like to make a large pot of food and make that last for a couple days.

Thank-you for peeling carrots/vegetables. Many home chefs today leave peel/skin on😞 That is not good unless you're roasting the veggie like with roasted sweet potatoes😍
Did you use the cooked pancetta in the soup or save it for another use? I couldn't tell if you had added it back in after the spinach or set it aside. Thanks
I personally like my soups to have chunks of vegetables and meat in the broth. It gives me the impression that I'm eating a hearty meal. I do like to blend my tomato soup, though, for that silky consistency. So, I guess it depends on the occasion.
@Saranya- for a veggie twist I make this using the exact same ingredients, just swap the bacon to small cubes of paneer sometimes and completely omit it the other times. I use veggie stock cubes as well for added flavour.

soup looks great! im a picky cook & u left the black eyes in potatoes. Supposed to dig them out w tip of peeler. other than that good recipe 😘🌻
