The Jamaican food stand - helmed by a husband and wife team, with the help of a portable barrel grill that can hold up to 700 pounds of meat at a time - regularly sells out of their flavorful brisket, lamb, and signature jerk chicken due to lines of adoring and hungry fans. She's from Brooklyn is my guess...I'm guessing my neighborhood... Caribbean central , East Flatbush...40 years ago, a lot of us first gen Americans (my parents are Ayitien) grew up with Irish and Italians who we gentrified before white flight picked up in the mid 80's.. but we picked up if not a non descript English then one with a tinge of the previous Italian and Irish, old school people in Canarsie , Bensohnurst and Sheepshead bay still speak that way.
I hate when people tell me I'm not from Brooklyn because I speak "white", it's silly....Brooklyn is a lot bigger than even other Brooklynites realize. 4 th largest city by population in the country.

The mildly sweet "Yoga mat" bread is indeed called "Hard Dough bread". It has a thick, fluffy texture. It's delish.

Kudos to Island Spices for the publicity! Having said that, if Nick Solares had ventured out of the confines of Brooklyn and Manhattan maybe he would have discovered Smoked Jamaican Jerk Chicken if he had gone to the Jerk Chicken Festival years ago. Either that or possibly ventured into the Caribbean sections of the city.
Too bad there aren't any subways, bridges, and tunnels that would allow Solares to travel to into Queens or deeper into Brooklyn. #HipsterFoodieProblems
