The length of the video wasn’t bad .. you packed a lot recipes in it. I make the chicken broccoli rice casserole about twice a month .. we love it and sometimes I switch out asparagus for the broccoli.
I'm not sorry! I want to make all of these. I wasn't sure on the beans and rice, but I definitely want to if I do a rope sausage or something. Andouille (sp?) would be 👌
Thank you for mentioning the tension between budget and ideals such as organic etc. I remember having this conversation with a colleague who was promoting the ideal of buying only Australian owned/made products. At the time we were on the tiniest budget and I had to choose feeding my family over more expensive ideals. I remember that conversation being really hard, because of course I want to support Aussie farmers and their livelihoods. But my most urgent priority was the children at my own table first. Now that we have greater financial resources, I do get to make those idealistic choices.
Jen…this was truly a great segment. And to donate all proceeds to feeding America is such a generous gift! That’s why I love you..you are so real genuine and relatable.
You are just amazing! Feeding a family on a tight budget is so difficult. Such good ideas! Also, donating the proceeds is awesome! You are such a good person! ❤️
My mom always grated spam into her homemade refried beans for that salty, meaty flavor! It melts into the beans and tastes delicious if you don’t have bacon grease!!
All of the meals looked good. This is probably my favorite video you’ve done. I liked how you offered up substitutes when you didn’t have enough money (ham for bacon) and ways to stretch the food throughout the meals. 🙂
Growing up in the 90's in the South, no less than twice a week, we ate beans, fried or mashed potatoes, and a loaf of cornbread. Sometimes my mom would throw in some pork chops or BBQ baked chicken, but we never went hungry. I appreciate these kinds of meals for reasons you know, but it's amazing how tasty cheap food can get!
@@christinainmichigan6726 it's severely underrated! But here in the South, I was always told it was poor man's food. $7 worth of potatoes, beans and cornbread ingredients can go do far. The cornbread ingredients will last A WHILE and then you don't have to buy that part for at least a couple of weeks. Big flavor comes in small packages! I highly recommend a good spice collection because no matter how basic your ingredients, everything has the right to taste good 💁♀️

You can get rice there if that is the only place to shop. Tomato soup 25% more cans. 16 ounce cans of refried beans if you don’t know how or want to try and make them. Most of my Dollar Trees sells a dozen brown eggs. Like Jen said lots of spices and they have name brand spices too. Another budget meal is hamburger gravy if you have hamburger. DT also sells hamburger sandwich which are good you could get hamburger that way and serve over I stand potatoes or noodles. For one person you can get leftovers. If you shop the DT you would be surprised at the budget meals you can come up with. I came up with a ton of 5.00 and some cheaper.
And yes to baked potatoes as a meal! In the colder months, a baked potato with turkey bacon, broccoli, green onion, chives, parsley, salt, and pepper is a favorite dinner for my oldest on SCIG infusion day. Easy on her tummy and no histamine to trigger a response.
My gift for my oldest son and his wife when they got together was a basic pantry and spice haul along with a simple mom made cookbook. They've been married for several years now and I still get comments from them about using the cookbook and how much they appreciated all the pantry staples.
This video is phenomenal!!!!! Talk about a weekly meal plan - wow!!!! This is my favorite cooking video that I have watched ever! It really shows how to use everything that was purchased for the week without having unused ingredients. I didn’t have a garlic roller, but tried rolling up a rubber jar opener - it worked well also - probably not as well as yours, but it was a good experiment and I will be getting the one you recommended Thank you!

I hear what you say about getting the veggies in on a budget - my hubby is in tourism which had been badly hit by COVID and I've noticed you certainly have to be creative when it comes to veggies options - frozen is definitely the way to go. Thanks for the inspiration - have just picked up your cookbook too
I absolutely love this. Just let's keep in mind that prices for food items are different in each state. For example in California for those same stores of course excluding Dollar Tree these items would be different and more in price. Also availability of these stores and bus access. I'm really impressed with this video! A lot of times budget meals don't include animal protein or green veggies, since they cost more! But you managed to make meals that are filling and healthy on a budget...great job!!

I just bought a cookbook called cook once eat all week and I am just starting the first week and it is a great idea. I am doing the prep cooking today and my weekend and week will be pretty easy to make my meals for the chicken, rice, and broccoli. I am using the cauliflower rice instead of rice and I am loving my food processor to help. I have enjoyed all you're tips and everything on you're channel, thanks for all you do! Take care!
Hi from your neighbor in South Dakota. I found it really interesting when you were showing prices at Walmart, I was looking at prices at my local Walmart on the app, and prices were quite of bit different. The salad and cheese was $.75 cheaper at your store and the rice and tortilla's are $.25 cheaper at your store. Crazy how prices can be so different. Awesome video. Thanks for sharing.
I love this video!!! I definitely want 5o start doing this once a month to cut down my my food budget. I definitely don't stick to one like I used to in the past and I definitely need to be more aware of spending. I love how you point out how it's a privilege to eat organic and things. Social media puts a lot of guilt for people who can't afford to buy full organic and things. Fed is best also applies to us as adults and our kids.
I like to save and freeze bones from meat and add for flavor. The bones (except chicken) can be reused several times. I tie them up in a thin cloth and add to the beans while cooking. After use, I rinse the bones and freeze them for another round in the future.
Mi mom spends a lot of time cleaning up her beans, and they are the best a little tip is to put a little bit of baking soda when you are cooking the beans it supposed to help with the gas situation some people experience after eating them, also put a kitchen towel underneath your cutting sheets or small cutting boards it will prevent it from moving and having an accident 😊
Super great video! When you portion all of these ingredients out, it makes me realize how wasteful I can be. Tonight I made hobo dinners and added extra so my hubby could have leftovers for lunch. That backfired because my hubby and son had seconds lol. That could have been a semi budget meal but ground beef has gotten so pricey. We still have beef from our 1/2 that we bought last year, thank goodness. Thanks for sharing these great recipes!
Ok those chicken enchiladas and homemade retried beans look 🔥 I’m definitely going to be trying these recipes! Thanks for sharing as always! I appreciate your detail
So I don't follow a really strict budget but I do find that I probably spend more on groceries than I need to. This video was really inspiring. Hi, me again, back to rave about more of your recipes!! I made the honey mustard chicken and baked brown rice for dinner the other night- omg!! SO GOOD! It was just as delicious as leftovers. I will definitely be making that for my son when he’s on table food!!!
Leftover ramen seasoning packets can work in the beans in a pinch. Also I like to save veggie scraps in the freezer for broth. Onion skins, mushroom stumps, carrot tips, and celery tops all freeze nicely

Over from Abby's channel. Great vid!
Brilliant Jen you are such a kind thoughtful lady xxx
Ok those chicken enchiladas and homemade retried beans look 🔥 I’m definitely going to be trying these recipes! Thanks for sharing as always! I appreciate your detail
I really admire Jen’s commitment to sticking to the challenge. Don’t let that onion haunt you! 👻 👻👻
So I don't follow a really strict budget but I do find that I probably spend more on groceries than I need to. This video was really inspiring. I know this was a challenge for you but I would love to see more videos like this. How to stretch ingredients, thinking about prepping bulk ingredients for multiple uses...I loved this!
Loved these ideas! So many yummy things and all on a budget! Thanks for sharing!
Hi, me again, back to rave about more of your recipes!! I made the honey mustard chicken and baked brown rice for dinner the other night- omg!! SO GOOD! It was just as delicious as leftovers. I will definitely be making that for my son when he’s on table food!!!
I love this. I wish the recipes and everything was written too like on a blog to print out.
Leftover ramen seasoning packets can work in the beans in a pinch. Also I like to save veggie scraps in the freezer for broth. Onion skins, mushroom stumps, carrot tips, and celery tops all freeze nicely
