I find bird's eyes to be a bit bitter. They're not too bad as filler ingredients when you want to mix chillies, but something hotter and tastier should generally be called for.
I’m not Asian but lived in Southeast Asia for several years during my childhood. My daughter grew up on my cooking. My SO and friends call us fire breathers because we like our food to the level of spiciness I grew up with. That being said, spicy food should never be hot just for the sake of being hot. That.s just bragging.
In Roma and Calabria people really like spicy food. And as an Italian I say. Spicy is a must!! I hope that soon all of Italy will eat spicy food. It's damn healthy. 🇮🇹
