It can be cut, but I would use utility shears rather than common scissors. You need something sharp but also with plenty of leverage to get through the thickness.
I'm surprised it it isn't Level 2 becuase of its thickness. I just picked up some Level 2 and 1 from Icon. Better safe than sorry. Great video John.

Which side goes against your back? Flat side or the curve side?
It probably doesn't matter, but I have the flatter looking side to my back. That way it doesn't catch on the jacket pocket.

Can this be cut from the bottom? I have Royal Enfield Explorer V3 Riding Jacket and this back protector slides out a bit.
